The stamina hasn't changed at all btw, only food and stamina drain on weapons have changed. So basically stop using Black Metal weapons that you are not proficient in, stop holding the run button all ..

I never encounter stamina problems, maybe you're sprinting too much? I think some players play holding shift down.

Double palisades + spikes will do, can lower or raise terrain as well for defense. The only real danger are mobs with AoE (Trolls) or magic attacks, vanilla invasions are manageable enough i'd say but..
