OP is going to have to use console commands if he wants to solve or diagnose this further. All the usual scenarios have been mentioned - mods, unique bug to OP, some base game dmg source, enemy spawn,..

I've used the butcher knife a bunch without issues. But not with mods active. My experience has never included mods in Valheim but in other games weird bugs that no one else had seemed to be often lin..
