They do this to give the illusion of a patch or update when they add and remove seasonal things.

They removed the players ability to craft these things. Did not remove them from the game. They do this for seasonal items like the jack-o-turnips and xmax tree's/presents.

Wolves having great stamina makes sense at least.Now that I think of it, swapping them and having wolves in the black forest and trolls on mountains would make some sense as well.

Yep, except the latest patch removed the Maypole but updated the crossplay.If your after a bit more after launch content then it's still a waiting game.
