If your mouse has a middle mouse button that is the default for "unmake".Also, if you press the hot key (1-9) for a quick item it will switch you out of building mode.

slanted hay like piecesThey're called "roof". ;)

dont use the floor pieces as roof even though u can use the slanted hay like pieces cuz i did that too and it said mine need a roof so i changed it and it worked make a back wall a side wall for each ..

Either those workbenches are clipping through the wall and it's technically exposed on the other side or you haven't got actual roof pieces above it.
