Ideal Graphical Settings?
I just started playing this game yesterday and noticed how hot my GPU gets. I run the game at 3840 x 2160 and am aware that's definitely asking a lot from any GPU, even one that can handle it. I also play Mortal Shell on the same resolution, but have a few settings turned down to make up for it which results in cooler run temps. In this game, I have the FPS capped at 60 and most values set to medium, but kept the lighting at a decent high (it's just stunning to look at).
My temps, even with everything set to high, capped at just below 80 C, which is still in the "safe zone," but most games I play don't have the GPU exceed 70 at most. So while I'm not in any real danger there, I naturally worry about the GPU's lifespan, as well as the longevity of the build itself, so temps that require my PC to make even slightly more noise to keep cool concerns me.
So, bottom line, what are some settings I can change to still get the natural beauty of this world without running uncomfortable temps, or does 80 seem pretty manageable in the 4 hour bursts I tend to play? What resolution, while maybe not looking as crisp, matches the scaling of my set up while still delivering solid quality for the lower GPU stress?

You can try using an Upscaler.
If you have Nvidia, they recently added a feature called 'Nvidia Image Scaling' (NIS).
It's essentially Nvidias own version of FSR, but you can easily get it to work in basically every game. There are guides on youtube on how to use it.
This will let you downscale the game to a lower resolution and then using this scaling technique to blow the image back up to 3840 X 2160 (or whatever your native resolution is) This can drastically reduce the GPU strain, while NIS tries to maintain the same image quality.
There is a little sharpening option within this feature to, which will allow you to sharpen the image if it appears slightly blurry from the scaling. I'd start with that 'off' though and then increase it by 10 after that if you notice blurring.

Consider changing your fan curve to keep the GPU cooler at high usage?

80 isn't even close to unsafe, stop worrying.
