They won’t spawn in areas that you already searched. So it depends on how much mountain areas you have not touched.

You can use a mod, that upgrades all the areas. You can uninstall the mod after the upgrade. If you have buildings standing you should read the manual.

Anywhere within 500m that you have explored will not have the new content.

For reference, by default, your Map Exploration radius is 100m. So even mountains well beyond what you can see on your map will not have the new content.

If you have already explored a lot, I would say yes, it's a good idea to start a new seed.

Like others have mentioned, you can either explore new areas or use the Upgrade Mod. I've used it and its pretty useful. Just install (copy paste per instructions), run the game, run the mod cmds, quit, uninstall, go back to your game.

By default areas near your buildings are not affected by the cmds so you can probably just use it without changing anything, but there are a bunch of variables you can change if you want to experiment. Recommend to read the manual carefully if you do, tho.

If you do use any tools to modify your world, please be sure to take a backup of your world files first.
