Just went back on that world to check it out... honestly don't think you will find a flatter starter island. It is small for a starter island but I think it would be too big if you used it up for a castle or something... Probably make a nice fishing village though!

Map generation for you may have been different but it seems flat to me.

There are some entirely custom maps on mod nexus that replace random worldgen with Middle Earth, Europe, Azeroth etc. One of those might have something good.
