THE FLAWED GAME
Every time you die, the character loses 3 levels of EACH skill, I repeat, you lose 3 LEVELS in EVERY EXISTING SKILLS. This brings the character back about 2 game sessions. To recover it will therefore take 2 game sessions, the problem is that at each game session you die at least once, consequently it is impossible to leveling a character beyond a certain level.
Also take into account that to create an armor you will have to extract minerals for about 10 hours of play (armor that you will throw away after 2 hours, since it will take the most powerful one. Another 10 hours, and so on, time after time).
Flawed and unbalanced game, the work done is so poor that the community had to intervene with the mods to repair the damage done by the development team (also intervening, but not only, on the deficient points that I have listed).
My teammates left the game, me too. Don't buy it.

You just didn't play long enough to learn how to play. Back in the 80s games were hard on purpose to make you keep shoving quarters into arcade machines. Some of us prefer games that are hard and take a bit of skill and learning to master.
Part of a game like Valheim is the journey not the boss fights. The only issue I had as a brand new player was getting the fine wood required to build the tool that allowed you to harvest fine wood. The shipwreck you are supposed to take apart on my original map seed didn't exist on my start island. The closest was on the opposite end of the adjacent island that was all Black Forest and infested with trolls.

Agree that the creators took the money and ran.
The people making mods have done a great job with a good game.
It's really too bad that the (PAID) developers couldn't do as good a job. :-(

Wow someone must have died a few times on their corpse run.
Skills are nice, but are in no way critical to your success as a player and you can finish all the current bosses with low skills. I personally just play the game and skill up as I do so. I have never concentrated on gaining skills or worry too much about where they are at any one point..
As to gear it really all depends. A set of Troll armor can get you to the Plains if you play smart and Wolf armor is a another set you can do fine in. I agree that Bronze needs something to make it worthwhile, but most people tend to skip making a maxxed set if any set at all. And gathering resources is part of this genre, but I will admit I don't think I have ever spent 10 hours mining.
I have not seen any mods that draw my attention, none that 'fix' the game as the game is not broken and some I would argue make the game pretty much a face-roll, but to each their own.
Maybe the OP just had a bad run, but the game seems to work for the vast majority of players. Here is to hopping the OP finds a game they like.

You don't need fine wood to make a bronze ax. Core wood, maybe, but you don't need a special ax for pine trees. Ship wrecks are nice to run across, but not required.
As for the OP, you lose 5% of your skill when you die, not a flat three levels. Depending on where you are in the game that can be a whole lot or hardly any. I did mod that part out though because I'm not fond of games that penalize my xp.
But if you don't like the grind then play something else or mod it. Pretty much every crafting game has a grind to it.

Must have been a bug then. My flint axe would not chop beech trees (I kept getting the "too hard" notice). I didn't unlock the bronze axe recipe until after I had fine wood. I had to have a troll knock down two beech trees and roll them against each other until they broke.Part of a game like Valheim is the journey not the boss fights. You're probably running into to fights like a berserker, and you think your shiny new sword is going to take down an abomination. No sir, every monster has a weakness and you have to learn and study them before you go out adventuring. Send out a scout before you go into a swamp head first. Regroup, and organize your army.
