For us, in France, Saint Nicholas is a germanic figure (wherever place the real saint lived in), so I trust that he was used by the Church to help evangelize German pagans, the same way it used Saint Mary in western latine empire prior to the Great Invasions. I guess that Wotan/Odin was more appealing to Germans, and a fertility goddess was more appealing to agropastoral celtic and romanized people.

You can ride lox when you get that far. As for why you can't do that with deer the game is still EA. It might get added but I doubt it. The devs want you to do the other Viking thing and sail.
