I played vanilla x3 thru last boss and loved it.
Then I added Valheim+ for QoL, Raft and Epic Loot and loved it even more but it got a bit easy towards the middle. So I added a bunch more (as per below) to add difficulty, new monsters but it was still not right.
Finally I got into the .json and .yml files to balance spawns/drops by world level and integrate EpicLoot drops on new monsters, etc, etc and it's been a blast, on my 2nd world now.

been playing vanilla exclusively since i started, until just a few days ago i applied a couple graphics mods.. downloaded Custom Graphics Settings and Render Limits to improve performance and then Willybach's HD Valheim to check that out..

Valheim Plus, because it has a lot of stuff in one place. Farm grid for planting. And after building a brand new Draugr Fang instead of upgrading my current one, I picked up a recycling mod. Sure, that was my fault, but it would take one heck of a brain glitch to do something like that in real life, instead of just having the wrong tab open when clicking a button.

Farm grid brought the greatest relief, I could not play without it anymore. Other than that I only use custom graphics and render limits together with willybeths HD textures for a better look, farther draw distance and more performance (sounds contradicting, but is true^^) and sometimes a mod to remove portal restrictions.
I would like to use the extra equipment slots mod, but there have been reports lately of a bug where you can loose the items equipped in the extra slots, so I stay away from it at the moment.
Valheim+ sounds great, but for me would be too much the way I like to play at the moment.

So, I hate the tedium of running back and forth for resources all the time. So a lot of my mods are geared around that.
-Unrestricted Portals - Sorry, its my biggest gripe about the game. And I absolutely hate the cart.
-Plant Everything/Farm Grid - obvious reasons here. I think its silly it takes 5 real life hours for a mushroom to regrow where a tree will grow in 50 minutes. I also just like to cultivate and make an area look nice.
-Item Stacks/Skills increase weight limit - Admittedly this breaks the game flow a little more than is reasonable. But it erases the tedium for me
-Autopins - Mainly so I don't have to manually pin all the ore deposits myself
Anything with build pieces that look like they fit the overall look and feel of the game itself. I love the build pieces we have, I just want more.
I've also added Build Camera and Build in Dungeons recently just for ease of building and some fun base building in the future. At some point I'll probably add some of the other mods that add more variety to combat/gear but for now I'm content.

I, personally, like the "vanilla" mod. ;)
That said, I do very much like the "Plant Everything" mod. As the name implies, you can plant all the bushes and other plants the vanilla game won't let you.

What are YOUR fav mods?
Many smaller mods that increase QoL, like farm grid, plant everything etc. and not to forget Valheim+ that allows alot of freedom to adjust various aspects more to your liking.

Crafty Carts (remake) is a pretty snazzy one. Great for building a fancy base somewhere or on the move repairing of things.
(Jotunn)Backpacks. A potentially OP storage option that balances out quite well. Good for pack-rat hoarders or 'Lost' explorers.
PlanBuild is great for those visual builders who need to see what they're working with, or just want to plan something epic but don't have the materials right now...
I am also an advocate of various portal mods that stop the (arbitrary) limit to taking non-used metal through a portal (If you're going to stop us portalling ingots, why can we take the sword that takes so many of them to make?)
Passive Forsaken Powers is a little OP mod that makes all those abilities permanent, but I had to get that and manually install it from Nexus, rather than the Thunder Store Manager

crafting from containers makes base building and crafting so much less time consuming and messy and is almost a must for me now What are YOUR fav mods?
other QoL mods are also good but most remove certain time sinks that I find enjoyable so I dont use them
