It depends on how you like to play. If your idea of an engaging game includes a healthy slice of World War One trench warfare, no problem. It's a wonderful game if you like to rearrange the landscape and shape the battlefields into killing grounds for your enemies. On the other hand, if you're a fan of that old Elder Scrolls advice to just run off into the distance and see what happens.... well, no, not really. You'll probably be obliterated. You can adventure more and prepare less if you are part of a group, but as a single player, you will spend a lot of time building and preparing or you will spend a lot of time dying. I went through the entire game a year ago and beat all the major bosses, and it was consistently interesting, but there were long periods where I did nothing but trench and build walls and mine ore. It's the price of progress. And it isn't quite as sea-based as you might expect a Viking title to be; I actually never built a longship at all -- no need.

(Note that the prohibition against taking raw metal and ore through portals, a prime complaint of players, is in fact utterly toothless since you can portal the Surtling cores that are all you need to build a foundry and charcoal kiln, and these cores are 100% recyclable if you have to move your metal production elsewhere. Don't lug ore around; move your furnaces.)

The inventory restrictions are good in themselves; carrying an entire truckload of material and tools is frankly ridiculous. The problems are that inventory is counted by type rather than weight and cumbersomeness -- a feather is as big a load as a bar of iron -- and that the automatic pickup of objects has no filter, ensuring your inventory is continually filling with junk.

I'm using an alternative to trench/dirt-wall warfare - from Swamp era on my home base is elevated a bit over 8 meters above everything else nearby. Don't have to build a plateau, just an earthen pillar. The choice of whether to engage a raid or not is pretty much all mine.

That's just one example, there a ways to reduce the 'grind' or, better yet, make it enjoyable. A big part of making it enjoyable is all in the player's mind. Also decentralizing your facilities to some degree as @Vivan, Lady of Dawn and Dusk noted above helps reduce 'unnecessary' trips.

I think it is very easy to get too focused on the task at hand and end up making things a grind that don't have to be. Have to make a sea voyage? Scout a bit and serpent/leviathan hunt along the way. The passage of time in the game is pretty meaningless really, so what if your voyage takes an extra couple game days because of a fun and/or profitable side venture?

All depends on you.

If you take your time, level skills up, craft what you need and reinforce those items to max level, make well defended fortifications, then no.

If you treat this game like a fast action hack n' slash or like you are invincible.. then yes...it'll be hell.

The bosses aren't difficult if you spend the time preparing properly. Using the Hoe and a few stacks of stone near the summoning area to raise walls to provide you with cover from their attacks and minions or other npc's helps immensely in my experience. I try to raise 4 short walls about 8 meter long and 2 - 4 meter high and thick, gives me high ground against small mobs and decent protection from most boss AoE and Cone attacks. I also make sure to level my weapon skills leisurely as I gather materials enough for several satellite homes in which to protect a Portal near enough the boss to allow for quick corpse recovery should things go sideways and yet far away enough to avoid boss damage.

Inventory is restricted by both volume and weight.

No.

Bosses do not require you to split aggro or anything to survive. Enemies are scaled up for more people but are balanced well for single player.
