There should be multiple Elder altars on your map. Each vegvisir points to the "nearest" one. You could sail and explore some other forest areas trying to locate a vegvisir that points you to a better location ... or you could use https://valheim-map.world/ to look at your map seed to find an Elder location you like.

Just bad luck on the one you found. Starting a new world is an extreme solution ... depends on how much time/effort you have invested so far.

If you really are struggling, you could go to the opposite side of the world and look for a spawner there. Usually, though not guaranteed, each boss spawner is generated in each quadrant. Like i said it's not guaranteed but it is common, so you may have to find a different spawner, simply explore away in the opposite direction, which may be a bit annoying, but it's that or creating a new world, or adapting to the plains enemies by a strategy or skill.

Deathsquitoes which are notorious for causing issues for newer players are glass cannons, if you have a bow, try to snipe them out, or, let them come close enough to attack, and dodge roll it, after that it'll circle you until it starts to fly towards another attack at which you've got an easy shot. Fulings deal a ton of damage, though their AI seems to be similar to greydwarfs, to deal with those, you can use a bow or an atgeir as it's range and ability to stagger enemies is tremendously useful.

Other than that, best of luck.

Mosquitoes have very little health. You can kill them with even the worst bow and arrows. Fulings could probably just be dealt with by summoning the boss itself. They'll get preoccupied with him, and maybe even do some damage to it.

And there's always the option to sneak. Most people tend to forget sneaking is even a thing in this game.

Not even remotely, all bosses are allied to all mobs.

Wasn't aware of that. Fulings seem to hate everything, so I figured they'd chop down an ent with glee.

Yeah kiting enemies into each other is a great way to deal with other enemies. Always remember that certain enemies don't like other enemies. Example: greydwarfs and trolls are allies. But they don't like draugrs and skeletons. If I run into a troll and don't want to deal with him I kite him into a swamp. Everything in the swamp hates trolls and greydwarfs. I bet everything in the plains hates them too and the elder.

Some of these suggestions are laughable for a newer player who doesn't know the ropes. Just saying, if you think dealing with anything from the plains isn't going to be death defying, you have forgotten being new...

OP, if you explored North before, then travel south. There should be, as noted above, multiple Elders. You might just have a bad seed though so you can also check the world generator at some point, depending on your frustration level. I might give it 100 hours of flailing round but know that some maps are just sheety.

I must agree with Foxglovez. I didn't address the issue of the plains in my response because I think it's a nonstarter. Wouldn't recommend spending any more time or resources trying to make that location work. The plains are three biomes ahead of your current progress in the game!
