That is true, but, 5 villages is quite a bit, since you don't really need that much BM. It is useful for recovering some iron from chests, though, and iron is required for the padded armor if you go that route.

After I typed that, I decided to upgrade my BM pickaxe, which took a chunk of BM. I normally don't upgrade axes and pickaxes, since they tend to get replaced pretty fast, but I've been using the pick in mistlands quite a bit and I need the durability.

You should be able to see the flax/barley from outside the village. I would just just sneek up close enough to confirm if there's any flax there and move on if it's not.

In my last playthrough I was looking for the totems, and I just sailed around the coast of plains regions and tried to spot the totem from the ship. It's probably easier to spot a totem than to tell the difference between the crops, but it could work if the crops are close to the shore.

flax is indeed somewhat rare, so keep searching

On my first save what I found first was flax (when I wanted barley). The next 4 villages I raided were all barley. Having played more on that server the ratio seemed to be 1 flax field per barley field I found so 5 and no flax is not outside probability. Just keep hunting.
