I had a 2 year break, and in that time the devs seemed to have ruined a game I loved.

They made some really strange choices, mostly stamina being now such a commodity. Enimimes seem weaker but more frequent, so just an annoyance over an actual threat. Al the time doing almost anything is a slug fest. Making a nice bases used to grand element to the game, but now chopping with little stamina and also getting pointlessly harassed means getting more then the base needed materials is a pain. What happened here?

I recommend starting a fresh game to get used to the new foods, starting mid game with no idea how the the new foods work or what they are will be utterly confusing. No wonder it seems like everything has been buggered

The only thing driving me off to play is the skill loss, i'm fine with dying and corpserunning, but the skill loss is a game breaker. Took me quite a while to figure it out how much it bothers me, pretty valheim did distract me from realising.
if it was a character level based game it would be fine to loose exp, but its just a bad deal playing when your skills are higher and each skill requires different activities to level.
it literally steals your time, its not hardcore, its just nonsensically punishing.

oh and that besides that it is still embarrassing you can not rebind your action bar or shift button.

Vegetable-based foods = Stamina (yellow)
Meat-based foods = Health (red)

You get some which give you an even balance (white) such as jerky, queens jam, etc.

People keep saying that but there are balanced food too that give both... and you eat 3 food... that makes for any combination, you can have a lot of stamina or a lot of health or a medium amount of both (1 stamina + 1 health + 1 balanced food) and then there's various steps in between

I didn't like the stamina changes and still don't.

Stamina regeneration rate needs to be more of a factor, not just the stamina pool itself.

They're going for a kind of "Dark Souls" vibe with how they designed it but the regeneration rate plays more of a factor in that. Like, how much carry weight, or items you have play into it more.

There are few things that effect regeneration in Valheim like being well rested, and meads, but there are more debuffs than buffs for it in the game.

Overall, I think they should eventually refactor the stamina system and weave regeneration rate into the meta more. Ether from food, or wearing different types of armor could play into it, rather than armor just effecting movement speed. As well as how much weight you're carrying.

Food with a red fork icon in the top right corner is health food, meaning it mostly gives health with only a little stamina. Food with a yellow fork symbol gives mostly stamina, not much health. It sounds like you don't have a problem with enemies, so try to eat at least 2 stamina foods and only one health food. I'm not sure what part of the game you're in, but a general rule of thumb is that meat foods usually give health and plants like berries or carrots give stamina.

Foods have colored forks on their icon, helping denote what it buffs the most. Or you can just hover over the foods to see the stats.
Red = Health; Typically meat based foods
White= Balanced
Yellow = Stamina; Typically gathering based foods

Early examples of foods will be just cooking raw meat on the rack for health and berries for stamina.
With the cauldron will be minced meat sauce for health and queens jam for stamina.

Before the change that was introduced for food there was a definitive best food combo from each biome. Now what you eat can add a bit of depth to your choices for game play and the best food to eat will depend on your style and objective.

It should also be noted that there was changes made to the blocking/parry system too.
I don't remember the specifics, but even a parry can let chip damage through, as well as players having a stagger bar and how easily you get staggered being based on your max hp.

any berry will work when first starting out. all foods have the stats they give in the tool tips

I've been playing on and off for the past two years, and I've got gripes with the game, but not anything close to what you just said. Enemies haven't been nerfed (other than recent Mistlands mobs, but that was attack pattern/aggressiveness, not numbers).

Maybe you're making noise at night when they're trying to sleep; that would be my guess as to your question about frequency.

Enemy difficulty isn't any different other than adjustments to the ones they just released with mistlands. Nothing you would have been around to notice changes for since those monsters were both introduced and then altered while you were gone.

Then regarding stamina, the food is now broken down into more specific stamina/health/mana foods with a few that split health/stamina evenly. If your short on stamina its because your not paying attention to what foods do. Alot of people had that problem after the hearth and home patch but its just a matter of learning how to balance your foods differently. If your having problems with stamina while farming eat three stamina heavy foods.

What happened is you now need to choose between health and stamina—you don't get both.

Since you're moaning about stamina, then eat 2 or more stamina foods. Problem solved.

Once you get a kiln and smelter you can make a cauldron out of tin. Plant carrot seeds and make carrot soup. Or you can use blueberries and raspberries to make queen's jam. Stamina foods are usually more plant based and health foods are usually meat based. Don't forget to upgrade the cauldron when you get turnips in the swamp.

Also Valheim Plus will let you tweak stamina. Get the newer "fixed" version of it.
