currently fishing is mostly not worth doing to begin with. there is always better food available with an easier method or easier to mass produce with nearly similar effect.

Could be something that changed after the update that upset one of the mods perhaps.

As in, your mods work & are all good for now, but could be a reverse uno card where the game is the culprit instead of the mods due to recent update? Try uninstalling mods first to see if it works in vanilla & if so, that could be the case why it all goes that way.

If it is the mods (I'm guessing it probably would be) you may have to install them back one at a time to figure out what mod is creating the problem.

I'm playing pure vanilla here though so no issue at all, caught heaps of fish between before update & now, not a single problem. Good luck with it.

Update: so i decided to check the mods again and discovered the Valheim+ is the culprit, It works fine BUT fishing has not been updated in it yet. you can use it just don't fish LOL, i deleted it and will wait for an update. Mean while i am gonna substitute (hopefully) the changes i like with separately made mods.
