Do serpent materials really have to sink?

Even with good food, my stamina just depletes rapidly if I try to pull one to shore. Are we just expected to get really lucky with the serpent spawning really close to shore if we want to get any of it's scales?

I'm all for the challenge in Valheim, but I feel like this is heavily reliant on luck. Like, they already have to be caught during certain weather and a certain time of day, but you also have to be lucky enough for one to spawn near shore too? I suppose the challenge could just be that the game deprives you of half your loot on this fairly elusive enemy.
True, but I believe the scales isn't required to progress. It's more of a bonus thing which you could try and get when the opportunity presents itself.

You make a harpoon, pull the snake ashore, kill it.that's all.It is only for this that the harpoon was invented in Valheim.

Okay but like I already said in the OP, if the Serpent doesn't spawn close to shore, you can't really do that and will lose out on some of it's drops.

I use a mod to make all drops float on top of the water.

The meat floats, the scales sink. Makes sense. If you want the scales, pull it to shore.

Go all in with stamina food. Not really needed but can help. If you checking the stamina you will soon discover that it does not always drain stamina when sailing in to shore.

First of all, you don't need to keep it harpooned all the way, just let it follow the ship. It has to be able to hit the ship once per minute though or it will lose interest so slow down occasionally.
You can also do damage to it on the way, just make sure not to kill it accidentally.
Once on the shore, quickly drag it onto the beach and finish it off. It doesn't attack while beached so stamina food may be preferable for this.

I jumped out of the boat close to shore then swam ashore. The serpent continued to attack the boat while I attacked with arrows. Everything was close enough that I had no issue recovering materials.

That part makes sense in isolation, but combined with their spawn conditions, behaviour and habit of evaporating like fairy gold at dawn the whole process of hunting for scales becomes wildly impractical.

It also makes no sense that dead creatures explode into dust and drop all their parts as neatly separated objects. If we're talking realism the scales should float because they're attached to a big ol' snake corpse.

Yeah, its hard to pull them to shore with the change to food. What I have been doing now is to get them chasing the boat, they will follow it all the way to shore, I slow down when needed. Then once I've beached the boat I harpoon it and pull it up onto shore to kill it.

"all the way" isnt quite right there. You have to let it hit the boat otherwise it will lose interest. Thats why I mostly dont bother.

The serpent in question was practically eating my boat before it just turned and left. Then the sun came up and it despawned.
