I think you can use the console to spawn one? Never used the console myself so IDK.

They added the ability to make the maypole in celebration to the swedish midsummer "midsommar".

eat something. that how me and my group members made the crafting recipe appear on screen.

Bringing up the hammer and obtaining the ingredients you need for the Maypole (even if you've gotten them already, get them again) is what a lot of people say helped bring the recipe up. There also might be a waiting period, so maybe wait a little bit after login to do so.

I think it's built with dandelion, thistle and wood, so make sure you've discovered stuff.
