Block + Space + Direction = 3 Keys. I'm having trouble dodging, too. Everything else works fine for me.
E.g. Alt + direction for dodgeing would be easier imo. Most actions can be rebound, so why not this one?

I agree that in general it should be able to be rebound, but not for the reason you say.

It's not clunky. You're blocking the enemy which forces you to face them while you're moving around them. Then, you dodge while you're moving naturally. That's.. not clunky. It's fine to not like it, but don't mislabel it.

I don't like it either OP....when I first realized I have to be blocking in order to dodge when I want to I asked myself, "of the hundreds of game's I own on Steam how many do I have to block if I want to dodge?".....The answer is ONE, this game....which then begs the question, why?
It's clunky af that you can't simply just run/dodge when you choose to. Yes, I understand that it's "not a big deal when you're in combat turtling and circling an enemy", but it makes any other situation of dodging clucky.

I find the default bind very practical. You always circle the enemy and hold block when fighting anyway, so that's just 1 key to press

I'm indifferent to the control, but it makes blocking preferable, which might be the intent. Guess if it isn't the devs will change it at some point.

It has to be a minimum of two keys at once, because you have to choose a direction to dodge. So what should the second key be?

Of all the buttons on a controller, that is the worst one to use for jump. However when you go to bindings options, to change it, you realise that there is no alternative. All other buttons are used, and more suited for something else. It is unfortunately both the worst and only option.

CTRL is used for sneaking, but that could be easily rebound to something else. You don't need to start sneaking in combat. Or let us sneak after 1 second, and use CTRL + <direction> to dodge. And you didn't mention ALT.
