Goblins ruined my playthrough

I'm usually not the one complaining about difficulty in games, but the goblins are ridiculously overpowered. Last time I played the game I beat the first 3 bosses fair and square, then I put it aside thinking I'll wait for the mistlands update before I continue.
Now that mistlands has been released the game is practically unplayable because of the ridiculous difficulty spikes. Sea serpents are ♥♥♥♥♥♥♥ annoying too, but at least I know I have a chance of dispatching them with arrows before they sink my boat (which they already did, twice) but the goblins are just stupid strong.
I've spent like a week preparing, I cooked the best foods available to me, I crafted the finest armor and weapons, maxed out their upgrades, and the ♥♥♥♥♥♥♥ goblins still kill me in 2 hits. TWO HITS. I can't even get to the SECOND boss because of this.
I read some comments about how you're supposed to dodge and roll, but come on, you know damn well that the game doesn't control well enough to be played like a Dark Souls game.
So I don't know. I'm stuck, and so far very disappointed with the update.

Pretty rare for me to even get hit by fulings in the plains. I wear full fenris set, and after they finish circling around me a few times and decide to attack, I block/parry the strike and kill them with 2 blows from my silver knife. 2 star fulings are the only ones that can hit through a block, but there is no mistaking them from other fulings so I dispose of them with ranged. One should be consuming Wolf Skewer, Bread & Turnip Stew at least for the plains, or something equivalent. It doesn't take long to perfect block/parry, and once you do there is very little to fear from anything in the plains or swamp.

I can't explore the mountains because I freeze to death. I need wolf armor to not freeze, but I can't get to the silver because it's at the top of the mountain which I can't climb because I freeze. I know there's a drink I could make, but I haven't found a beehive at all so far. I feel like they've been made more scarce.

can just spam camp fires and once you have the silver, wolf trophy, fangs you can make the cape and not freezer any more

You need to defet Moder to do anything with what you get out of the plains, so, even if you were strong enough to be in the plains, it's not going to do you any good. You need mead as well, so you're going to have to find some bees.

You also need to defeat the Elder to get iron. There are other ways, but it takes forever, and you need alot of it.

Definitely spend some time looking for bees, you'll need honey later for other things too. If you don't already know, they usually spawn in the meadows in those derelict huts, some times in the derelict towers things. Just make sure to have some arrows to shoot them.

If you know this already, apologies, sounds like a bad spawning. If that is the case, I suggest creating a new world, explore that new world for resources like bees till you have what you need.

Two hints:

1) Valheim World Generator.
It has the nice option to select the location of only that you need.
In your case, bosses and beehives.

If you don't want to use that, post a map of your game, as well as your current seed here and I'm certain someone will be glad to help you out finding a few beehives.

2) You don't have to enter the mountains to get to / kill wolves.
Just travel around the edge of the mountains until you hear the wolves howling. Move a bit into the mountains, but avoid to get the freezing status.
If you spot a wolf, use a bow to shoot at it, but aim that way your arrow may land between the wolf and you. Use that method to lure it towards you, then kill it.

Another thing you may try, is to set up a trap, which you use to catch it. When it's tamed, have it follow you, try to get a 2nd one the same way and use those to breed wolves. Name the adults, kill the cubs once they've become adults and they will provide you with enough materials to survive the mountain biome.

Lots of questions here. Like what kind of gear are you wearing? What weapons/shield are you using? Is all of it upgraded? What are the "best foods" you have right now that you are using?

For myself I am in the plains now and have T4 iron armor, a huntsman T4 bow and I'm using obsidian arrows. My food is Turnip Soup, Wolf Skewers and Eyescream.

Did you go to the plains before the mountains? The Mountain/snow biome is supposed to be explored and cleared before Plains. Nothing can come close to 2 shotting me in the plains.. I think you may have skipped a step somewhere.

You're supposed to go meadow -> black forest -> swamp -> mountains -> plains -> mistlands.
Reads like you're trying to go meadow -> plains which I did back then too and yeah, problems a plenty.

There are multiple summoning locations for each boss. If you have and Elder that is landlocked by biomes you are not ready for yet then my suggestion is to just sail the opposite direction and look for a different one. Either that or sail around the island and see if there is a meadows on the other side you can cut through to get to the elder.

You can explore the mountains- one of the things you have access to after Bonemass is frost resistance meads. Make some, take some with you and go mountaineering. :) NB- leave some at home too in case you die and need to recover your gear. Also, as long as its not storming, you can just take wood and stone with you and build a chain of campfires up the mountain to prevent freezing. (If you choose that method you should take a portal kit with you and practice getting it up fast in case the weather turns and puts your campfire out. Or take a bonfire kit with you as well)
