Short answer - Unity engine text-editing feature can be used via signs (those made of wood and coal). Docs about rich text tags here https://docs.unity3d.com/Packages/com.unity.textmeshpro@4.0/manual/RichText.html

I used this a year ago, and while it does consume too many characters it was a lot of fun.
Our multiplayer world had a farm that had a sign saying CROPS in the biggest possible font and in a bright colour.

cool but consumes too many characters in the sign text. Would be nice to have it as a second entry in the sign setting dialog.
