Yea, i actually had it but missed the workbench section when scrolling through the config file.

Valheim + or Build Restriction Tweaks are your friend.

Valheim plus. There you have a bunch of configs~. I myself doubled my workbench radius there. You can also remove that you need a roof to use it. Very nice and logial in my opinion.

I don't remeber exact name but, there's mod that make workbenches have higher radius higher level they are
