Yes, I saved my game

So I checked out the new areas. Now I would like to get game back out of beta test. Anyone know how to restore without losing my seed?

No you do not. I have run a server between the RTM build and the public-test versions on multiple occasions utilising the same game save file with no issues. Backups were performed but not required to be restored from.

If the OP has made changes on the map, ie building, more exploring, etc then rolling back to the pre public-test build save file will lose any changes they made on that save file.

In your Steam library right-click Valheim, select 'Properties' then 'Betas' and set it to none. Wait while the game does a small update.
You can find your save games in users/yourname/AppData/LocalLow/IronGate. (probably on the C: drive)
There should be a folder for characters and a folder for worlds. Copy your backups from before you entered the Beta version so that they replace the current saves.
You should then be back to where you were when you did the backup before starting the Beta test.

Do all like suggested pinewoodro but
perhaps a better option would be to rename both characters and worlds directories (e.g. put an exclamation mark on the first position of the directory name) and then restore backups of the respective directories (to avoid mixing old and new world and character files and databases). If you ventured with an old character into a new world, it can be a risk - the developers warned that the data may not be backward compatible ...
