You can start now but really I'd wait a couple days so weapon balance and food and such doesn't suddenly change on you.

Mabye waiting would be the best experience.
There is comming some food changes with the new update.
and a few balance onces.

But its all up to you ^^

I would just wait until the update. If i understand correctly existing worlds will still have the new things in unexplored parts so if thats true you could also just strictly limit yourself to a small area to start and avoid exploring very far until the patch drops. With just a few days though i'd wait to start a new game myself.

I mostly mean will the world and everything carry over to the update or will we need to regenerate the world to be able to get the new stuff ?

If you dont explor too far out there will not be a problem.
