Wind Waker/ Swift Sail
Is there a wind waker or some other way to control the direction of the wind in the game?

Yes! A sailboat will move fastest on a beam reach, I believe, when the wind is going perpendicular across the ship. A broad reach is also pretty fast, when the wind is coming from behind, but from an angle (maybe 45 degrees like you mentioned!), and so the opposite of tacking (tacking is beating upwind -zig-zagging into the wind- if you didn't already know), is called "Jibing", when you stay in that broad reach zone to get the maximum amount of speed.
Is all of this implemented in the game?
It sure feels like it! A broad reach in-game does definitely feel the fastest. However, the only thing that's missing from the sailboats is a boom, to go *boom* when it smacks Viking's heads while tacking or jibing.
I personally jibe in-game whenever I have a tailwind but I want to have some fun and get to my destination a little faster

indeed moder Forsaken Power grants 100% Tailwind, i found the speed of the ship was far faster when the wind hits at 45* angle Crosswind The Brightest Whitest part of the sailing compas means your getting the fastest speed, the modder tailwind is akin to a barely saling INTO the wind with the slight angle to move forward up small canals/rivers
ALso, beware of 45*angle cross winds during an a ocean Storm.... in multiplayer, that max speed weird ♥♥♥♥ can happen, along with ship damage
;)

There is a mod, I think it's called 'wind fix' or similar, that always puts the wind at your back when you sail. Makes sailing much more betterer.

I saw that earlier, it seems a bit "cheaty" to me though. I'd like someone to make a wind waker mod.

Sailing in Valheim is so very much like sailing in real life, one must tack slightly into the wind much of the time to get to ones destination. Simply zig-zag back and forth occasionally making 90 to 160 degree turns. Surprisingly once I figured this out sailing was a breeze ...

Yes, kill one of the bosses for his power, but it only lasts a while.
