Displayed amount wrong
While having an incomplete stack of wood in inventory, picking up full stacks adds only the amount of the incomplete stack to the "recently picked up" display
No wood in inventory
Pick up stack of 36 -> 36 in inventory -> 36 displayed
then pick up stack of 50 -> 86 in inventory -> 72 displayed
No wood in inventory
Pick up stack of 36 -> 36 in inventory -> 36 displayed
then pick up stack of 50 -> 86 in inventory -> 72 displayed

Whenever you pick a big enough stack from the ground while also having a partial stack aleady in your inventory, the picked-up stack gets split into two inventory slots, and the game displays it as picking two different stacks, hence why you see a different number.
ie.
pick 36 -> inventory has one stack of 36 wood -> game displays 36 in the top right
pick another 50 -> game adds 14 to the first item stack in your inventory to reach maximum stack of 50, and creates a new inventory stack with the remaining amount 50-14=36 -> game displays 36 in the top right
It will never display 72 wood, because the maximum stack of wood is 50.
The game has allways shown the total amount of a single recently picked up resource. Picking up 2 Woodstacks of 50 displays that 100 Wood were added to the inventory. It's not the stacksize, that is faulty, but the pickupdisplay.
pipo.p has it right, I didn't look on the known issues page before posting.

I've not had that problem. Unless you're running a mod that's fouled up, you should be seeing stacks of 50 and then another smaller stack that makes up the balance of what you've picked up sitting in your inventory.

i've noticed something similar. no mods. i will have 10 of something i can make a pile of in my inventory (wood, stone ..etc). when i break down a pile and pick it up it doesn't say i've picked up 50 items, but will say i picked up 10.

Hey! This bug is already acknowledged in the Valheim Bugtracker site. And you are completely right: the game only displays the amount added to the last filled in stack in the inventory.
