Stamina is ok...
But sure, it could be better. I've adapted to the new system, and for me after getting used to it the game now plays pretty much like it did before H&H.
But I can see why some are having trouble, and think there could be improvement. There is ONE change that would make it perfect. Leave it exactly the way it is, but have it apply to ALL. Being chased through the forest by 20 grey dwarves? Well if you manage your stamina better than them, no problem. Fighting something big with a high damage power attack? Go aggressive by hitting them to keep their stamina down so they can't use it.
Give them a stamina pool based on creature type and star level. Maybe even make them stronger/faster to keep it challenging. It's only fair!

With more time I can say this.
Since H&H the amount of Stamina you have on a new character can be harsher, the amount of stamina used seems to be greater (though that has been adjusted) and in general these things are only an issue if a) you are just starting. Once you can make Queens Jam or Carrot Soup that issue really becomes moot.
Honey also is very helpful early on.
The changes have made the Rest Bonus and the Eik power more useful. Rather than only using it long runs I may use it in a fight or to escape a fight. It was very useful mixed with Stamina potions in the Elder fight for me.
However once you are into Queen's Jam and so long as you are spazing out and actually think about your actions it is fine. I have not ever died because of my Stamina since H&H and that includes early on dealing with a Forest Moving event.
Now... if you are wet, cold, or wet and Cold without the rested bonus it can feel like forever to recharge when using a bow. Dealing with lots of mobs with a Bow is a time consuming activity and I honestly think it is a large part of the issue people have.
I don't know about the Stamina of a Club as I used Spears early in the game and in the process of training up clubs now. Less stamina usage on a spear than a club.
Over all though unless you use a Bow, or are just starting out the Stamina issue is almost always just someone whining because the game is a bit harder.

I don't get why so many people have problems with stamina in the first place. I mean if they want to see what true stamina management hell is like they should try the DarkSouls Series. Especially at the lower levels when you don't have or can't add extra stamina and your facing multiple enemies at once. I think most of them would rage quit within the first 10mins.
As for this game yes i agree it can be annoying at times but the majority of people that complain about it hardly use their brain at all. i.e when they are being chased they run in a straight line untill stamina has fully drained and then get swarmed by the mobs chasing them and are unable to dodge or counter. when they should be looking at the environment aground them. looking for advantages to use. Only using so much stamina to run then using the rest to attack or evade.
i understand the stamina regen is quite slow to refill but its still manageable and maybe Irongate could either tweak certain foods or add new ones to boost regen instead of the max value.

i just dont like the amount of stamina used for running. who likes to WALK in a game? climbing mountains get really tedious with stopping for several seconds, the run up to the next snowpatch, rest again. for me this adds nothing to the game but annoyance.
half the amount of stamina used for running would help the game a lot. for combat you still have to wathc over your stamina management since all combat moves, dodges and jumping still uses it.

Food, rested/dry/warm status, potions, timing, using the environment to your advantage, weapons, powers and so on can help with stamina management in most cases.
20 Greydwarves chasing you? Staghammer will make short work of them and get you a ton of resources for their trouble.
1 big scary enemy? Time your attacks well, don't waste stamina rolling around when walking / strafing is just as effective and use the terrain to impede the enemy or make it path to you in a way that allows you to regain health or stamina in order to deal with it + potion/power if need be.
Sometimes retreating is also the best choice especially if you are exploring and do not have an easy portal to access for a body run should you die.
Fighting a big rock golem I'll move around on hills or ridges to try and jump on it with a pick axe for higher damage and hopefully not getting hit by it's attack while doing so. Or just pop bonemass to kill it.
"You are being Hunted" event I'll find a nice boulder nearby and then range the wolves down until there is a pile of resources by the time the event is over (unless they somehow glitch up the rock resulting in me being pushed off and dying due to forgetting bonemass or trying to jump back up on said rock lol).
Knockback and other crowd control effects can also be of some use.
