Mods to make the game less grindy?
This game is really damn grindy. Anyone know of any mods that address this?

The game is very very grindy. Takes ages to make anything and get anything.
Well ...
and how would you imagine it? After all, you have to find raw materials to improve yor equipment, food etc. This is what drives you to explore the world around you (i suppose). According to your theory, every RPG and similar game genre would have to be grind (except perhaps arcades and adventures) ...
Mining itself is quite boring, the drop rates for metal are too low and the map is way too big for the content it has.
Standing next to a copper/mud/silver/tin vein and clicking on rocks is not a very engaging/fun mechanic when it takes too long and you don’t feel like you become better at it. Iron pickaxe is only marginally better/faster than earlier pickaxes.
Then, the world is too big. What is the point of having 20 Black Forests if all of them offer the exact same experience? How exactly is “exploring” rewarded?
The time it takes to sail is at too long. It’s boring. Except for the odd sea serpent, it’s just waiting.
There you have it. These things together create a feeling of grind, which only serves to artificially prolong play time.
They should add more content (more stuff like the mountain caves), make the world smaller (why have 15 swamps when you can have 5 swamps?), reduce ore requirements/increase drop rates, make the sea less boring.

I actually like it the way it is. Making the world smaller would make it feel cramped. I don't mind sailing, I actually like it. Mining and harvesting being a bit of a chore is also part of the game. As well as base-building. I spend most of my time building, crafting, harvesting and mining.
It's not for everybody, I'm sure, but I happen to like it. If you're looking for a fast-paced action title or fully fleshed out story-centric RPG, this isn't it.

There you have it. These things together create a feeling of grind, which only serves to artificially prolong play time.

This game isn't that complicated.
There are 5 bosses. You find resources so that you can make gear, which you make to help you beat the next boss. That unlocks new resources and gear, and another boss. That's it. That's the gameplay loop. You want even LESS reason to play? Fair enough if you don't like that gameplay loop but with the changes you're suggesting this is a ten hour game.
Since you have almost 300 hours into it, you must kind of like it. You don't get to say it "artificially increases playtime" after spending that amount of time on it willingly even though you don't need to spend anywhere NEAR that time to "beat" it. Nobody forced you to keep playing, or to max out all of your gear, or to spend dozens of hours building. If you're burned out then stop playing, but don't expect the devs to ruin the experience for everyone else just because you've gotten bored.

I think the grind is part of the game and it is actually not that bad compared with grind in some MMOs *cough* WoW *cough*.
Gathering materials and braving the dangers while doing so is a big part of the survival game genre, IMHO of course.

Valheim+ on Nexus will let you tweak just about any number you want, including drop rates for rng ores. It also includes a lot of quality of life stuff. You'll need to customize the settings in a text file but it's pretty self-explanatory. It covers most of what you'd want.
I also recommend Farm Grid to make planting neater and faster.

I didn't say anything about removing any semblance of effort. I said make the game less grindy. Not the same thing. Not sure what you're expecting to be the fun part once you remove any semblance of effort but it would take less than 5 mins of searching Nexus Mods to find every mod you'd ever want to remove hours of gameplay.

I concur on Valheim+
If you spend some time tweaking and testing you can exchange mindless tedium with more stimulating progression. I also added 'economy system overhaul' mod so you can turn excess into cash. It makes some of the potentially mandatory grind a little less so.

I haven't tried the Valheim Plus mod but supposedly it adds a LOT of QoL stuff.
I personally like the CraftingWithContainers and EquipmentAndQuickSlots mods. They don't do anything for the grind, nor do they have any affect on the environment but having the dedicated slots for your armor/utility items frees up a few valuable inventory slots and allows you to build stuff quickly if near chests you've built and put resources in.
