Multiplayer may be a great thing for you, where you provide food to a group of bashers.
But solo, or generally without massing cheating, no: this is a combat oriented game and gathering materials means fighting for them.

If you want to avoid fighting, I don't think this is your game. Play Civ or something. Actually better yet... go play Minecraft which you likely have already done..
The trick is to find the MineColonies mod. This lets you run a village, recruit guards, etc. It worked on 1.12, 1.16 which you can run these instances of the game using various mod loaders such as GDLauncher.
Only on 1.12 but Ancient Warfare is a great companion mod to the above as it also lets you build structures, recruit NPCs, have an army. It has good moving of resources around via couriers and populates the world with lots of other factions and strongholds. Siege weapons, etc.
I feel like this would be more satisfying than Valheim with your stated intentions. Getting some texture packs will help the graphics situation too.

You sort of can, but the farming and building is a means of gearing up for tougher boss battles. Look at the screenshots to see what other people have built to see if it's what you had in mind. It's mostly for show though, no npcs in your village.
If you dig a ditch all around your area most things can not get to you from outside. Workbenches and other select buildables can keep monsters from spawning inside your base. If you gather resources and kill bosses on one world and then build on another, you can avoid the difficult raids.
You'd need to use console commands or mods if you want to avoid fighting.

well there are sieges you will have to defend against. Wouldnt surprise me if nexus has a mod that disables sieges though.

You can use console commands (or mods) to make yourself invisible to all enemies, make yourself invincible, give yourself complete creative building (everything can be built for free), give yourself the ability to fly etc. etc.
Sure, you can build whatever you want, in safety, but at that point you aren't really "playing" the game.... you are just using the building blocks provided by the game to make buildings.
If you want to build and play without console commands, you will have to deal with constant influx of hostile creatures coming to pester you, and if not properly prepared, can / will kill you.... That's just in the starting area (meadows)... ANY farther into the game, and you will most certainly be attacked by hostiles which will kill you dead, very very quickly, unless you properly prepare and defend yourself and keep yourself fully fed, and rested and geared with the best armor /weapons / tools / mead you can produce.

if you are playing the normal game then the positioning of your base actually matters. good early safe spots are small islands that you can cover entirely with workbenches to prevent events and enemy spawns. later on building on trees, plains rocks, or within/under rocks or making trenches also becomes viable
