Things that needs a change
First of all i will say that i truly love this game, but there are some things i absolutely hate about it, i will make a list, but starting with a big one: Mistlands, i hate that you cant see more than a few meters, even with wisplight. this biome is so cool, why hide it? same with snowstorms in the mountains, it is just annoying to play a game and it wont let you see more than a few meters. Many people play games for their visuals, right?
Here is a list of things i wish could change.
-Food buffs. the stats should not drop until the timer is gone, i feel you constantly have to eat foods to maintain max HP etc. even 30min food is mostly gone after 15min
-Stamina, stamina should not be shared with Running, jumping, swimming, fishing, harpooning, rolling, planting, repairing and fighting etc.
-Fighting in uneven tarrain, it is so annoying to miss an enemy because you are 20cm higher up in the tarrain.
-Walking in "steep" places. you can literally scale anyting while Sprint/jumping, but if you stop or just walk you will slide all the way down. cant even walk up small hills without sliding down.
-Swimming, we should be able to swim more than a few meters before needing to rest.
-Wisplight. wisplight should activate as a passive buff when entering mistlands, and not take up an inventroy space, now you cant have Megingjord in Mistlands basically.
-Inventory space. there is no room for any loot while carrying pots, foods, gear, ammo, and basic building materials. please give more inventory space. (alot more)
-Boss powers, the non fighting buffs like treefelling and sailing wind should just be passive. Maybe the others could be nerfed and be passive to?
- campfires and torches you place should burn forever. With a big base it is just tedious to go around refilling torches. imagine doing this in minecraft lol
-Arrows, you should be able to collect the arrows you shoot, atleast 50% of them.
-Repair ALL button in smiths etc, have someone ever only repaired one item? i allways have to spam the repair button.
-Standing close to a chest should give the mats you need to build things.
I bet there is more small improvements that would make the game more enjoyable to play.
these are just the ones i though of now.

How about a save & reload feature? You know, like in other games? I tried to make a post about it, but it never got posted apparently.

you are supposed to struggle with weight, inventory size, enemies, nature, food, terrain, this is a survival game. what you want to play is absent of many of the mechanics that make a survival game. so you dont like the game. my only complaint is its 2 easy after you learn the enemies, biomes, ect. difficulty should be adjustable.

**{Valheim Plus setting does this 100% - enable true/false degrading of food over time or none at all}
-Stamina, stamina should not be shared with Running, jumping, swimming, fishing, harpooning, rolling, planting, repairing and fighting etc.
**{Valheim Plus doesn't do this specifically, but you can change practically every stamina usage parameter - more stam, more regen, less stam used for specific activities like running, swimming, etc. You set one, none, mix of what you want}

**{Valheim Plus does this 100%. You can set how much or how little stamina used for swimming. If you want, can make it swim for miles, up to you on % change made)

**{Not specific to this exact item slot but Equipment & Quick Slots by Randy Knapp gives you dedicated item slots for armor, Menginlord, etc. Also, if losing the belt prevents you using wisplight because you dont want to lose the weight buff, simply use Valheim Plus you give you the excact same weight buff the belt does, without ever needing to wear the belt. In cfg file you can set weight buff for char whatever you want, including separate buff for belt if desired. Not exact solution per se, but gives same desired fix in roundabout way}
-Inventory space. there is no room for any loot while carrying pots, foods, gear, ammo, and basic building materials. please give more inventory space. (alot more)
**{One or both of Valheim Plus and/or Equipment & Quick Slots will do this. Just Valheim Plus alone lets you set column and rows desired for char bag, for each type of chest, each boat, etc. You can set if you want 8 columns by 20 rows max. Personally don't go that high but I use 8x10 on char and find that plenty}

**{Again, solved by another mod - Faster Boats. If you perma want the boss power for sailing wind, can essentially use this mod to set your raft and boat speeds to compensate as if you always had the buff. The other boss powers nope, but tbh after even bit of play, tree felling is irrelevant bc you level up tree skill plus better axe, and run buff is configurable with Valheim Plus.}

**{Probably sense the theme here, but Valheim Plus - 100% exactly what you ask for and more. Can set per fire source whether it uses fuel, auto refuels from nearby chest, or never goes out. Campires, torches, etc. Wonderful quality of life change - have tons of base torches and would go crazy refueling each one manually}
-Arrows, you should be able to collect the arrows you shoot, atleast 50% of them.
**{There is a mod for this, several in fact, but tbh I've personally never found need for it since even by mid game I can craft more arrows than I need but if you really find this a bother, search for it. P.s. Valheim Plus does allow setting arrow speed and force, to make archery more predictable}

**{Valheim Plus again friend, 100%. Can set the auto repair all gear option whenever interacting with a work bench. Click - poof - all repaired. Can't live without this feature}

**{Valheim Plus again - this exact option is one of several original reasons mod was made. You can set craft from chests, range it looks for those chests to pull materials from, etc. Didn't ask, but also fyi can set same ability to allow refining items automatically - dump ores into chest nearby kiln, it auto pulls ores in, makes metals, which you can then setup the next type of refiner to auto pull that in. An assembly line of automated refining if you want}

these are just the ones i though of now.
Almost everything you wish for is available with mods. Please don't take this as 'duh use a mod' - it's fair to wish for things in base game without resorting to mods. But two large reasons why 'use a mod' makes more sense than make all you wish as base game.
1- if you use a mod to change these, then only you are affected. Anyone else that wants same, can use mod. If made as base game, then almost certainly there will be groups of players that don't wish what you wish (e.g. maybe they love low visibility in mists, snow, etc)
2- the specific mod I recommend doesn't actually change much unless you set the parameters to what you want. So this is imo awesome, because this lets you turn on/off and how much % change it does.
So, that said - for most of what you want, I'd use Valheim Plus. I've noted above in copy of your reply above, a one line reply to each area the mod would help - enclosed in brackets.

so you can just reload whenever you die? thats not how survival games work dude. the point is to survive, and if you die you are punished. you can always hack and ruin the game yourself, no need to change everyones game not that the devs would ever make a save feature and ruin their own game. How about a save & reload feature? You know, like in other games? I tried to make a post about it, but it never got posted apparently.
