Difficulty mode?
I cant be the first valheim player to question where the difficulty option is? Especially for a game that is mainly a single player game thus far, etc. I'd love to see it make it into the game. Thanks!

It's not in the name, but that's what CL&LC is all about.
Creatures can spawn with differently colored stars, if you want to. Each color tweaks the creature in a different way:
Magenta - Quick - Moves faster, 40% increased movement speed
Red - Aggressive - Attacks faster and tries to hit you more often, Attack speed increased by 25%, interval between two attack waves and circle time reduced by 50%, interval between circles increased by 150%
Green - Regenerating - Regenerates health over time, BaseHeal = Health at 0 stars * (1 + 0.25 * stars), Healing = BaseHeal * (10 * log(max(10, BaseHeal - 1000)) / (BaseHeal + 1000)) * 1.2 / second
Cyan - Curious - Comes checking for you from a farther distance, Hear and view range increased by 100%
White - Splitting - Splits in two lower level enemies with the same color upon death, Example: A 4 star Greydwarf will split into two 2 star Greydwarfs on death
Blue - Armored - Takes less damage, but moves slower, 66% less damage taken, 50% reduced movement speed
Fire-Infused - Resistant to fire damage and vulnerable to frost damage. Ignites you on hit.
Frost-Infused - Resistant to frost damage and vulnerable to fire damage. Freezes you on hit.
Lightning-Infused - Resistant to lightning damage and vulnerable to spirit damage. Deals lightning damage.
Spirit-Infused - Resistant to spirit damage and vulnerable to lightning damage. Heals itself on hits.
Poison-Infused - Immune to poison damage. Explodes in a poison cloud on death.
Chaos-Infused - One of the other infusions, randomly selected on each hit.

Currently, the game has various extremely easy ways to beat it in its current state. This then has lead to players creatively coming up with their own challenge modes for example:
1. Vegan: you cant eat any animals nor use any resources from animals. So if it needs a hide, you cant use it.
2. Reverse: Beating the bosses in reverse order.
3. Passive: no direct use of weapon. Fires and spikes and tames are ok because its indirect.
4. Naked: no armors
5. Speed runs on random seeds.
and the list and combinations go on.
Pretty much for now that's all the difficulty mode semblance we got.

i recommend playing with other players, the grind can be a bit much alone, plus its pretty amazing to see what a group of people can accomplish

I took the OP to be asking for a harder difficulty mode, not an easier one. I guess it can be read both ways, hah.

Compared to most of the games I have played, this one is pretty easy, a HARD mode would definitely be appreciated. Compared to games like WoW, EQ2, Conan Exiles &c, the grind in this game is insignificant. The toughest thing for me to acquire was the Elite Draugr Trophy, and one does not even need that.

The difficulty options are on Nexus mods and Thunderstore. You can set the difficulty in either direction that way.
But yeah, for now there aren't any in the vanilla game. Although, whether or not you look up guides or the map can change your experience greatly. (Except you can't unread a guide.)

Mod-wise you have Creature Level and Loot Control which adds passive mob abilities and higher star levels, and various mod packs to add new creature types. https://valheim.thunderstore.io/package/ASharpPen/Spawn_That/dependants/?ordering=most-downloaded

A slider or some selections would be great.
The mods up HP and damage, but really what you want are things like the mobs are faster, more mobs at night, multiple sea serpents in the same area (does that ever happen? Have yet to see more than 1), etc.. Plus I think on harder difficulties mobs should be able to climb very steep terrain, thus ditches or steep hills for bases can't protect them, just slow em down (and trolls+ crush through logs/stumps on the ground. Basically make the pathing easier so they are more deadly). And more 1 and 2 star as soon as you upgrade gear, etc.
Faster mobs would probably make it a lot tougher. Escaping is usually easy, faster means much harder to retreat and you get swarmed quicker, so have to be careful more often.
And on higher difficulties maybe bosses have more abilities, and move faster, strike faster.
Game is great but what I find most fun is the challenge of gathering and building while being attacked, and that is only exciting at the very start of the next biome you start to work on. Once you get the next step up of food and weapon, a shield or piece of armor, starts to get pretty routine. Be great if it was dangerous at least until you are fully upgraded.

My concern whenever difficulty is discussed is that devs just go the easy / lazy route and make mobs damage sponges or make you a weakling. You have some nice ideas beyond that.
