I have two windmills up, but that's mostly just for the aesthetic of it. I could easily get by with one.

A single windmill is enough to crank out loads of wheaties. It has a beefy 50 input reservoir so it doesn't need much upkeep.

it may depend a little on location to get wind/weather so it works fast.
but 1 has always been enough for me, given that it takes longer to grow than to grind, assuming growing in single person quantities. Also i guess if you spam bread for food... could need a 2nd one.

Yikes. The flour takes up five times the chest space as the grain! Flour can stack to 20 but grain can stack to 100. I store the barley as grain until I need to grind a little bit.

1, can't imagine you need more in solo. It takes a fair bit of time to make it's resources anyway. I just fill it up and come back the next day or so.
