Valhiem Plus, lets you reconfigure the numbers for a lot of different things, from slight improvement to virtual god mode to uber hard. Your choice of what to use, not use, and how much. (I also use it to make my smelter and kiln autofeed from chests, and so I automaticaly reequip my weapon when leaving the water. There's a lot of stuff in there.)
I also use Farm Grid to make planting easier.
And Dodge on Double Tap, because pressing three things to roll is ridiculous.
is configuration pretty straight forward? or is this gonna be something that takes a good amount of finagling/guide for?
You edit a text file with things like true, false, or a number value for various things. It tells you what everything is for. Might want to backup the default text file before you change anything. It requires BepinEx. I personally use Vortex from Nexus to handle the download and dependencies, but I believe that Thunderstore has it too along with its own manager.

Hoe Radius and Reset Terrain; Reset terrain allows you to reset any modified terrain to default. Hoe Radius allows you to decrease or increase the area the hoe attempts to modify. Also influences the reset radius.
Mass Farming or Farm Grid; Mass allows you to plant by default 5x5 plants in an evenly spaced grid, still consumes stamina for each of the 25 plants as well as durability. If you're short stamina you'll only plant what you have enough stamina for. Farm Grid gives you snap points on plants.
Timed Torches Stay Lit or Torches Eternal: Stay lit allows you to have torches that turn off during light and on during dark without consuming fuels. Eternal disables fuel consumption as well.
If you really like to build stuff; BuildShare BepInEx Version is nice. It allows you to convert buildings to files so you can share them or build them exactly how it was saved in a new location. This mod may require watching a tutorial to fully understand how it works.
If any of these mods break, you can simply remove the plugin and play normally as they are minor augments.
Valheim Plus is prone to being broken upon most of the updates that Valheim receives, which can mean you get stuck waiting for updates or risk some problems with your world if you've chosen to increase the build height or other major changes.

This is true, and true for a lot of other mods too. They're pretty good at updating though and the wait is usually only a few days. Be wary of increasing inventory size or anything else that can cause problems if it suddenly disappears, or needs to be turned off. I lost a few items when moving to the test server that way. But overall I think the pros outweigh the cons.

I like Heighmap Unlimited. You just can't dig a good storage cellar without it. I've got a cabin over a former silver vein where I just plopped a house up top, and excavated silver while building the cellar. Made a nice stone floor; ringed the cabin on top with spikes, and I can last wolf sieges in there. It's my perm mountain base.
Also Valheim plus (so I can use my longship to transport more resources in fewer trips) and the aforementioned PlanBuild structure. Much easier way to draft the design, then build it. it also saves the blueprints when your base is damaged by enemies, so it's a lot simpler to fix things that way.
Fishing overhaul, so that when fish wash up on shore, I can actually pick them up.
A handy thing called upgrade World, a tool which forwards the changes made in various updates to the world you've already set up in. Got five caves placed in my pre-explored mountains that way.
I consider QoL, Honey Plus, from thunderstore. It adds more honey recipes to deal with that excess honey you built up before you found out how much you wouldn't use.
Oh yeah, and I also use Valheim plus to enable any ore in blast furnace. It didn't make sense to have a smelter and furnace. Charcoal, yeah, but two different metal-melting apparatus- no.
And I love precise rotation.

- Bigger Minimap Discovery Radius, if you care about exploring the map fully, instead of leaving little slivers untouched. I use fairly low settings of ×2 of the default radius on foot and ×3 when at the rudder on a boat, you can go up to ×10 but beyond the ones I use you'll miss a lot of ore veins, abandoned structures, etc.
- Clock, to show the in-game time. You can show it with hh:mm, but I prefer the "fuzzy" setting that says e.g. "late afternoon"
- Inventory HUD Info, adds info on how many slots and how much weight you're carrying to the main play screen, not just the inventory
- Mass Farming, just makes farming larger amounts a lot less finicky. This is probably the most "cheaty" of my mods IMO, more than the minimap one.
- Quick Cart, adds a hotcut for the cart which works within a configurable distance.
- Quick Store or Quick Stack - Store - Sort - Trash - Restock. Haven't used these much yet (just tried the first one a couple of times but it needs a bit of setup to e.g. not stack arrows away from your inventory), but either should really help with sorting stuff into chests. If you've played Terraria or Stardew Valley, for example, these should feel familiar.
- Show Container Contents, shows a list of container contents on mouseover
Those are all from Nexus. They have two dependencies (mods that are required for them to work), the BePinEx pack which unfortunately I had to get separately from Thunderstore iirc, although I'm not 100% sure if it's absolutely necessary if you have Vortex (Nexus's mod manager/launcher) set up correctly; and Configuration Manager, for doing configuration for setting options on several of those mods.
P.S. I'll have to check out Hoe Radius and Reset Terrain, especially if the latter could possibly help with performance issues around player villages. Although I suspect the main problem is light sources guzzling resources, and then also building blocks also take some, even if you don't dig or level a lot.
P.P.S. Once I get to the plains stage in my singleplayer game, I'll probably enable BlastFurnaceTakesAll, simply because it would help with smithy layout to have the inputs on the same side, and the blast furnace looks cooler too.
I've also looked at More Gates (which adds one more dependency mod too, but it's not a big deal), which adds a decent amount of building pieces, especially doors, windows, gates and trapdoors, but also some others. Unfortunately even having that enabled seems to prevent multiplayer unless the server also has it (I assume), so it's disabled for now.

I posted my mod list above, and for the record, NONE of those broke at all with any of the Mistlands updates (the big one or the small patches). Some are still unupdated from Oct-Nov 2021, i.e. before the Frost Caves update in early 2022, and they work fine.
For me, the pro of not being worried about waits after patches is preferable to a large mod that does tons of things. Or even if something does break, it's more likely to just be one thing, rather than a whole package. I don't even want a large mod that does tons of things to begin with, even if I could choose to only enable say 2% of it. I prefer smaller, more standalone ones. But I admit that's a matter of taste.

He said ignoring God Mode crap, V+ is a pure cheat mod... Valhiem Plus, lets you reconfigure the numbers for a lot of different things, from slight improvement to virtual god mode to uber hard. And Dodge on Double Tap, because pressing three things to roll is ridiculous.

It's not god mode unless you tell it to be. It's completely adjustable. If you are one of those players who complain that Valheim is too easy it will fix that too. You can use it to make things harder. Make enemies tougher, make your own hits weaker, decrease your armor rating, increase death penalty, disable map and portals. It works both ways.
I personally haven't touched the combat settings. I could if I wanted to, but I chose not to.
