That moment when...
...Minecraft is more user-friendly.
There are issues with inventory, crafting, and mobs. There's an issue with having to punch or shoot a rock for 3 hours before being able to fight the troll you can't run away from...
You expect too much of your players without giving them anything to work with.
This is a "Flash in the pan" scenario.
This game won't be popular for much longer if it doesn't broaden its scope and focus on internal mechanics instead of new ones.

1. The trolls are incredibly slow, so you CAN absolutely run away.
2. I did 0 training or shooting of arrows in any wall or stone. Think i used 29 fire arrows and he was dead. a kiting strategy in the early game. Before even getting to bronze age..
3. Hiding behind trees turned out to be even easier.
If anything, my experience is that the enemies are too dumb and easy. But anything is easy once you figure it out.
If you instead want an easier curve you could suggest a monster suitable to be in between the grey-dwarf shaman in and brute in difficulty to the trolls. But i'd go as far as to say the brute is more annoying than the trolls. I use the trolls as tree farmers. Super easy to just lure towards trees then jump away and he cuts all trees for you.

Why are you punching a rock for 3 hours? Whats wrong with you? Was the troll watching adn cheering you on as you were valiantly slaying the rock or something? I mean you couldnt get away you say so he must have been there watching..
I'm a player and i havent run into these problems. I've found plenty of stuff to work with, had to craft most of it myself, even crafted an encampment and later on a castle. Even some boats, a cart, managed to tame some lifestock, grow my own veggies, did some magic.... I dunno, never really felt like i didnt have anything to work with myself.
Asfar as slippery slope arguments go this one is okayish (4/10). Missing the by now obligatory "i'm a developer myself"-tripe but sure, you have the cataclismic end result of not listening to your wisdom in there.
Guess we all experience different things in this game, or should i say, things differently!?

This has to be a troll post (pun not intended, but appropriate). They happen nearly every day. Same kind of regurgitated silliness over and over.
That or a player use to serious hand holding.

Fighting a troll you can't run away from.
You can literally run 20 meters to a tree, crouch behind that tree, move around the tree to avoid his line of sight and he will lose you in about 5 seconds and returns to his location.

I really want to know what went through your head when you made this post. The second I opened your post and saw the comparison to Minecraft, it took my brain literal seconds, like 2 seconds to realize the comparison was dumb considering how much time has been put into developing Minecraft. Did you just not realize how dumb of a comparison it is, or did you purposefully ignore that fact?
Also how fast do you just give up? I don't know a single player whose response to seeing a troll for the first time was to just give up and let themselves die, they all were able to get away. You're not supposed to rush progression, did it not occur to you that you aren't supposed to be able to fight a troll yet? You could grind your levels up on a random rock in the same way you could grind Pokemon to level 30 before the first gym, just because you can doesn't mean that was what the intention was.
There are legitimate criticisms for this game, yet somehow every single person that attempts to do so misses the mark completely. It's like people only thought of their criticisms AFTER deciding they want to criticize the game like a bunch of contrarians.

I don't know how you play this game but when first I got this game, I didn't punch or shoot the rock, I didn't know that method to raise the skill level and I didn't know there's a skill level for every tools or weapon that we use and yet I still manage to kill Troll or run away from it easily. punch or shoot a rock for 3 hours before being able to fight the troll you can't run away from

I died against the troll. Several times. Largely because I'm too stupid to run away at the right time and not particularly good at this kind of stuff
As there's no permadeath, that meant the challenge of sneaking up to recover my stuff. And then of learning to do better. And eventually I beat the troll* and had as big a feeling of achievement as I could have asked for.
We're all different and we all like different things in the games we play, but I would have hated to have been robbed of any of that, including the deaths.
* I did then get instantly killed by the troll-felled tree that fell on me. Hey ho.

"This is a "Flash in the pan" scenario."
flash in the pan
a thing or person whose sudden but brief success is not repeated or repeatable.
Its also a gun term from some of the earliest models. But I can't make any sense of what the guy is saying, is be beating a rock to level skills up? People that do this to themselves and then complain about it baffle me. I never did any skill up grinds in valheim, its one of the reasons the game is good-- you don't need to do that crap.
Troll vs bow. Dead troll. Just takes time to chew them down if you just got started in the forest. Trolls are a shade of blue that stands out. They are 30+ feet tall. They make the ground shake as they walk around. Its not like the things sneak up on you. And you can run away, but you need to get somewhere that it can't see you anymore to get it to go away. As long as it can see you, it will chase you. Anyway, just shoot it to death. They are infrequent, so once you kill one you almost always have a clear area to work in (still has GD, but troll free zone for a while).

This game requires initiative, resourcefulness, and imagination (the big one). You can run away from trolls (they're actually easier to run away from than most enemies because they're so big and slow). So not understanding really why you can't run from a troll. Also, this game is nothing like Minecraft, but if you want one that's similar, go play 7 Days to Die. Might be your style, unless resourcefulness, initiative and imagination aren't really things you've developed yet, you'll have a bad time with that one being there's also a learning curve.

The charitable thing to do here is figure you're just venting out of frustration, and will get back in game, recover your gear, and move on. Realize this game is all about gear. Sure skill levels help, but your equipment is paramount. It's dirt easy to make bow. By now you should have killed about 1.72 gazillion Graylings and saved the resin. Use that to make fire arrows. Troll hate fire arrows. Kill your first troll and you've got a fantastic armor upgrade.

Just FYI to help a new player...
Stamina management is everything in this game. Your health and stamina go up depending on what food you eat and regeneration of stamina is effected by being rested, dry and warm.
I think this is the main problem you are facing right now in figuring out how the game mechanics work.
Good luck!

Nah, you're just reading too much into your own immediate reaction. It's still in the most-played top 50 and the people playing are putting in FFXIV hours. This is a "Flash in the pan" scenario.

Minecraft is ten years old...a decade...this game is four months old.
Of course there will be issues, its early access. Now before people start labelling me as a fanboy, understand this; I'm a harsh critic when it comes to games. But compared to other early access games, this game is a gem. The game has more content at release than any other ea.
"There's an issue with having to punch or shoot a rock for 3 hours before being able to fight the troll you can't run away from..."
No idea what this means. I hardly punch anything, I use tools and I certainly don't shoot at rocks? And I can run away from trolls..
You may need to clarify what you mean.

Are you talking about the game or your character? I say no to both either way. Your character progresses by getting the best gear possible before taking on the boss in the next region, rinse and repeat. As for the game, its four months man; give the developers a chance. They have a road map and have done regular bug updates, I'm looking forward to the next content update.

You can't run away from a troll? Wow.
Your play experience is much different from mine. The first troll took a while to kill, but it certainly didn't take 3 hours of shooting a rock; I think I spent a full night plinking wooden arrows at a freestanding wall section in my house but otherwise no special training at all. (pro tip; you don't have to draw all the way back to get exp, so you can get in a LOT of arrows in one night.)
I'm sorry you didn't like it.
BTW, I think I should draw your attention to two words; Early Access.
