Carrots - is the squeeze worth the juice?
farming it pretty attention intensive and I'm not seeing the products being sufficiently great than the one step simple meals. Tell me I'm wrong.

First thing discovered was holding down the E key.
The recipies do require going out and gathering berries and stuff that just can't be made local. that makes stockpiling the right foods unpredictable.

All the products you farm are worthwhile especially since they never spoil.
If you wake up and its raining that is a good day to go out side on your farm plots and do that and tend your tames instead of exploring.

I only farmed carrots a short period, once I got to the next higher level, onions, I left carrots behind, but they are good when you are at that level; worth farming.
What you'll really need to begin farming is the barley and flax, in the Plains biome. It's a component of the next higher tier of food and resource for armor...farming is definitely needed to boost your food supply boosts.

carrots may not be worth it specifically. At that tier, any food is good food, and sufficient.
by next area, though, and going forward you will find that you need more than just a campfire grilled meat and a raw mushroom. The 1 ingredient foods are good for revisiting lower tier areas or @ home things, but exploring a new area after the dark forest, quality foods are a huge help to surviving long enough to get some upgrades.

Kinda funny actually, in a previous discussion people did not realize you could just hold the button down on a controller to harvest. Not sure if keyboard work the same way though. What's attention intensive about spending 2 minutes planting crops and then being done with it?
Then some people did not realize you need to plant 1 seed carrot for every 3 carrot, that way you constantly have seeds for new crops.

It does. Hold E and walk around your field to harvest everything, quick and easy. Kinda funny actually, in a previous discussion people did not realize you could just hold the button down on a controller to harvest. Not sure if keyboard work the same way though.

Carrots give 10 health and 32 stamina.
Mushrooms give 15 health and 15 stamina.
1 mushroom and 3 carrots, made into soup, gives 15 health and 45 stamina.
Blueberries give 8 health and 25 stamina.
Cooked deer meat gives 35 health and 12 stamina.
1 cooked deer meat, 1 blueberry, and 1 carrot, made into stew, gives 45 health and 15 stamina.
That's a combined total of 60 health and 60 stamina from 2 foods, leaving another food slot for something else. The only single-ingredient foods that even come close are magecap and jotun puffs... from the Mistlands.
Make some boar jerky for your final food slot, and you've got another 23 hp/stam, for a total of 108 health and 133 stamina... and practically never left the Meadows. Using single foods, you can do get one or the other, but cooking up some simple stuff will get you both.
Later foods are even better.

Farming will become a staple of your Valheim life. Growing crops is 100% worth it and much better as umop already stated. Farming is one of my favorite things to do.

Single-ingredient foods give 1 hp/tick health regen.
Carrot soup gives 2 hp/tick.
Deer stew gives 3 hp/tick.
Later foods give 4, or even 5 hp/tick... and that's per slot. Cook and eat the right stuff, and you can get 15 hp/tick health regen.
It's not just about health and stamina.
Single-ingredient foods give 1 hp/tick health regen.
