Welcome to the game. I'm also relatively new, having just killed the first boss. I'm still running away from trolls :)

You increase your skill levels by doing things--ie jumping, running, using a knife, etc. As you pick up wood and stone and other items, you can craft stuff that helps. First thing is always a workbench that you can then use to repair existing buildings or create your own. As suggested, check out some intro youtube videos. This game wants you to be slow and cautious to succeed.

200 hours? I just finished spending nearly that amount of time just in my blood magic autotrainer getting my skill to 100! (Lord that levels slowly).

Did you upgrade your workbench to level 2? Some gear can only be built by higher level workbenches and forges. Also, pick up everything and chop down everything to get new materials which unlock recipes. Kill everything too....

First, build a hammer.
Equip that hammer, then build a Workbench.
That will unlock a lot for you. Next, build walls around the workbench and a roof over it. That will enable you to USE the workbench to build other things.

I'm almost at 200 hours and have only cleared 3 swamp crypts. Slow and steady............... remember that. Haven't had an embarrassing corpse run in a while because I plan and am careful. IT's what the game is all about, imo.

Gather 3 wood and 2 stone and make a hammer. When you equip the hammer it should open a build menu that starts out with things like a work bench (required to build most other items), walls, and beds.

You unlock new things to craft as you acquire new materials and upgrade your crafting stations with other unlocked addons.

Most things are unlocked from picking up certain items. e.g. picking up wood and stone/flint, will allow you to build a stone or flint axe.
The progression is also gated by bosses. So, for example if you wish to mine stone or copper (copper is found in the Dark Forest biome) you need to kill the first boss (Eikthyr) and craft a pick using the antlers that drop.
