Enemies may not destroy saplings, but you waving a mace around will destroy your sapling. Its unfortunate that this happens, this is why fences are so great!

My advice

When you finish digging a copper vein all the way to the bedrock, round out that hole into a pit, and farm in the pit. Nothing will be able to reach you, and if you throw a couple workbenches on the cardinal points, nothing will spawn inside.

Pits for farming

Mobs will attack plants if they cant reach player. I placed some barly on other side of ditch and once it grows up, i go near and wait for night. Then goblins come and do the work, so i dont have to pick them up manualy (or use my weapons).

Lazy farming mode.
It doesnt work for Onion, carrots or anything else that you put in ground as they will get destroyed.

I don't think they'll go out of their way to destroy one plant if there's a big building nearby on which they'll want to focus.

they had the choices but instead attacking the building they attacked the plant first

yeah and the blobs/oozers will blast your entire garden, so either put the garden in a stake-walled area away from your main base or make sure your main base has walls too high for blobs to jump in
