I have had this world since almost the beginning of early access (my only own world). I had not explored this corner of the map before, but the regions I had explored prior to the update turned into the kind of splintered coast you can see on the west side of the region here. But lately I've found much more solid land.

When they added the Mistlands the patch notes stated they had also updated the world generation mechanic in order to create larger Mistland land masses.

If you save is that old then that is the issue; no updated world generator. You may be lucky and find larger land masses, but to get the best experience I would suggest a new world seed.

Looking at the spoiler map i have some large landmasses of Mistlands, but quite a lot of it looks like the area where you have marked "Infested Day 662" on that map and is really kinda unusable.
Guess i'll try to purge the map from my brain and keep sailing.

Also no, the save was made in the current version.

The region might be splintered due to it being a bay area and almost entirely surrounded by coast. Here's another screenshot of an older area which I had explored almost exclusively by ship before the update. It's probably apparent from the map that it would be impossible to travel that exact same route by boat now. So I think that the jagged islands is just the coastline for mistlands, and when it occurs in "tight" shapes like bay or maybe medium-sized island, it turns out like that.

the mod upgrade world can regen mistlands in old save with new map generation.
just run the command world_gen mistlands I think its called to regen just mistlands area with new system but do it with a backup. get it here https://valheim.thunderstore.io/package/JereKuusela/Upgrade_World/
