You can drop a crafting table down to do basic crafting you just can't repair stuff. I make one covered crafting table then place several around my base so they stretch out allowing me to craft quite far around the perimeter of my base.

I do the same. Cant get the garden and everything I need in radius of 1 crafting table

what are you balancing?!
its just an aggravation. Its a valid one: try building something when your tools are 100 yards away from what you are working on, or out in the rain or even hot mid-day sun. But there is no real game change to make it have a bigger radius or not need a roof; it may be a dose of realism but it does not change much either way. Its < 2 min to gather 30 wood and nail one up even as a new character -- hardly a big deal in terms of gameplay.

Rain doesn't prevent someone from using a work bench let alone being outside. <_<
No, this is just another one of those strange design restrictions that make little sense to all but the dev who designed it that way.
...it doesn't? I'm not saying it's impossible but people usually put up some kind of cover if they're working on a project. Rain definitely impedes the ability to work. This isn't some arbitrary design restriction, it makes about as much sense as anything else in the game.

I could not agree more. The game is full of them. My viking can refuse to eat and not starve to death. My viking can refuse to sleep and not collapse from exhaustion. My viking can 'remember' how to craft items he never encountered in his life on Earth once he gathers resources he never encountered in his life on Earth. My viking can craft, in a few minutes, a set of armor that would have taken him days or weeks to make in his life on Earth if he had been a master armorer. And the list goes on and on.
Perhaps that dev made this particular "strange design restriction" just to annoy you. In that case, thanks a lot.

On topic, wood is all around you, and you can stick a roof piece to a tree or rock outcropping so it's fairly trivial to put a roof over a crafting station.

4 wall segments, two in back, one on each side, connected; 2 45 degree wall segs and 2 45 degree roofs....push the workbench as far back into the structure and it'll work (there are probably some more simple ones, but this is what I use :-) )

Why? Simple answer is for game balance. Being able to plop a bench down and (no cost) repair all your stuff (amongst other reasons) would be too easy.
You literally only need to add 2 more pieces comprised of the same materials to do exactly what you're describing so, unsurprisingly and like the majority of other mechanics arbitrarily added for "balance" reasons, it's overcome with a couple of seconds of inconvenience rather than systematically changing the game.
Next time it rains, go outside and make a bird house. It'll start making sense then. ;)
And yet you can make a campfire that works out in the open.
