Do ore deposits respawn?
I tried googling this and found a ton of conflicting information from the past two years. No idea what the current situation is.

So when you need more ore, do you just go further and further away from base?

Yes, consider making a Karve which has 4 storage slots and sail to a copper deposit near the shore. Then just load the Karve's storage up with 4 stacks of 30 for 120 copper/tin and sail it back to base.
Or bring the materials for a workbench and cart. Head out to the ore deposit and place the workbench then build the cart. Now load up the cart, I would not really got past 2000-2,500 weight in the cart or it will become very hard to pull. Now pull the cart back to base.

Effectively yes. There is so much ore on a single map that you in theory should never be able to exhaust it all. That being said, I do utilize other worlds and move it between them so as to not entirely strip mine my "active" world out.

is there a way to make getting resources for efficient? rn it takes FOREVER to run looking for them and carry them back.

You can carry what you mine on your person to a nearby base. Build a smelter and kiln where the deposit is and smelt right there as you mine and then transport the smelted metal. You can build a cart once you have bronze nails and move about 3 times what you can carry without getting bogged down. You can build a ship and mine near the coast (especially tin) and fill the ship up and sail it back to your base (if you built it close to water) and use a cart to move it from he water to the base.

If you don't mind cheesing the transportation you can start a new world and build a work bench and a few chests. Then store the ore there and log back on to your world that you are mining in. Without ore or smelted metal in your inventory you can use a portal to go back home and then you can switch worlds, grab the ore, switch back and store it or start smelting it, completely bypassing the no ore through portal restrictions.

There's some cheese methods (world hopping being the easiest)
Non-cheese early game:
Build a portal at the ore deposit and another at your base. Mine the ore into a chest and use the portal to repair, rest, and store the huge amount of stone you will also mine. I recommend saving the stone because you will need an enormous amount of it to build with later.
Once the deposit is mined out switch to leather armor (if you aren't using it already), build a cart at your ore deposit (nails can go through portals), load your ore into it (not too much though or it will become impossible to pull up hills, especially with low run skill), pop Eikthyr power and run it back to your base.
Unload your cart, hit it with an axe until it's destroyed, pick up the materials, go back through portal while Eikthyr is still up, repeat until all your ore is moved. Don't start refining until Eikthyr fades or you return it all.
The game gives you all the tools you need to hump a bunch of metal around but you have to think about how you're going to get the ore back ahead of time of it will become frustrating very quickly.

There is an exploit/cheat you can use if you dont want to run or sail your metal home.
1). play valheim and find the metal and put as much as possible in your pocket.
2). logout
3). make a new game in the main menu ( dont delete the old one ) and build
a storage crate.
4). Now logout. Now change your character so that the player is the one who have the metal in his pockets.
5). login to the new game and put the metal in the storage box.
6). Logout
6). load he primary game and again use your primary character/player and travel home to your base via teleport, ship ect.
7). logout and go back to the new game and now pickup all the metal.
8). logout and go back to your primary game and your character will now have the metal in his pocket.
With other words change inbetween different games and you can use the logout function of the game and loading of other valheim worlds to "teleport" your metal from one game to the other and back. This way you can "teleport" the metal to another game and then back to your primary game.
Regarding how to find metal.
After the player defeat the boss bonemass you get a wishbone.
This wishbone can detect hidden tresures BUT ALSO are able to detect
scrap piles in the swamp area below the ground that have metal in it. So there are more metal than what you can find in the crypts in the swamp area, there are also some you can dig up outside.
And in the mountains with snow, you can with the wishbone find silver .
Super tip regarding copper ore. ( and other ores )
Often the copper ore deposit is ALLOT larger than what you can see and is actual a giant rock that goes deep below ground.
There is a super trick. If you instead of mining the rock dig around it all the way so it just hang loose in the air then you can destroy the entire coppper ore rock by hitting it 3-4 timess and it disentegrate into +100 pieces.
Yes you need to dig quite allot to make it 100% free and not touching anything, but you save allot of hard digging doing it this way. ;-)
it is especially usefull for metal deposits near the costal line where its easy to park your ship and carry metal to your ship.
