Did it look like a periscope?

Those are leaches....the ones from the swamp. sometimes swamp parts are in the ocean (??).

They spawn and it looks very strange indeed,

I think is was an episode in South park... involved some kind of probe.

It was honestly looking like the antenna of an ant or bee or something, they were large

That is serpent. I have seen that on YT channel when the owner of the server made an event for other players. He flew around in debug mode and spawned multiple serpents for an event. As others were approaching we could see exactly what you saw. Serpents unfolded vertically above the water like an antenna (with their heads down). When they came closer, serpents folded back and dropped in the water.

I'm sorry but I do not think it was that either, this was two next to each other, and I was close enough to see the detail, Im kicking myself for not getting a screenshot

maybe an Abomination... they fight things in Ocean shoreline... i spotted one fighting a Boar that was on its head,,the Abomination was almost fully underwater!!, so after laughing heaps shot the boar so i could then kill the abomination
