Question about the caves update
will old (world/saves) have the new (caves/content) added to them? or only fresh worlds made made after the update?

As per patch notes „unexplored areas“, so yes it seems they will be added to old saves.

Big mountains, very high up...mountains that breach the clouds! Very sheer cliffs too, very dangerous...

Not all the time no. Some caves can show up on rather small mountains.
