In-Game Gamma/Brightness/Contrast Settings
Threads are being created asking for in-game gamma/brightness/contrast settings. Here the official answer for now (October 2021).
The devs will maybe implement such settings in the future.
Meanwhile we ask you to please check your monitor settings! You should be able to adjust gamma/brightness/contrast directly in the settings of your monitor. That's also one of the reasons why these settings are not yet implemented in-game.

I honestly increased the brightness (not the background light) of my screen not because of this game but because of some movies and GTA online and it works well for this game. You can also decrease the contrast a bit to help.

Night time is supposed to be dark and they know everyone will just turn up brightness? There's a way to do it if someone really wants, no reason to make it easy to trivialize a major part of the game.
Well, if they wanted to do that, it would be probably something more hardcore like Rust or add a dark fog like Minecraft or CS:Source. Besides, the camera angles of the burial chambers with the torch makes my eyes hurt sometimes.

Brightness adjustment
Is there any way to change the brightness in this game since I can hardly see at night or in certain areas unless the room I'm in is pitch black.

I had this too. My fix was lowering black saturation on my monitor. It was previously to that absurdly dark. based on conversations with others this problem seems more commonplace on higher quality peripherals. A simple gamma scaler would be nice but until then hopefully this helps.

Nvidia settings?
Keep in mind: Nights and dungeons are supposed to be dark. But I know the difference between dark and dark... I've seen this in many game myself.
Just start the game and force the brightness on the fly with you GPU software to see what suits you best.

Torch or a later game object may be helpful too. ...and in dungeon - leave the yellow mushrooms until you're heading back to the entrance.

True Night
I would really like to see this game with actual darkness. Torches are not exactly useful atm. Standing torches are nice but hand held torches actually make it harder to see. Having it actually get dark and then having moon/star/etc light would make nights much more interesting. Scary nocturnal creatures would be my next suggestion if true night ever falls in Valheim...

Do you not think it's dark enough? I think computer settings play alot with that, as sometimes I think it's not dark enough and sometimes I'm like damn should of brought a torch. The moonlight in game does show I spose they could optimise it more
It does get more dangerous at night, higher tier mobs venture depending on boss you've killed in the world and wraiths are night time spawns for the swamp. Fenring are night only in mountain. Serpents are kinda night time spawns but i don't think it's impossible to see them during the day. Oh and Odin is night time only, aswell as Thor being storm only

It definitely is more dangerous at night. But I can always see without a torch. In fact I can always see better without a torch than with one. The head lamp works very well and does increase visibility. But its never really dark for me not even in dungeons.

1. It is way more dangerous at night, and if you want it even more dangerous play with a few more vikings in the game.
2. I recently upgraded to a new computer. I will tell you that my old video card made the night look like grey cloudyness. The people I played with kept asking how I was able to see so well. I had no clue what they meant until I got this upgrade, now its like playing in pitch black. Its definatly a video card thing where some allow for brighter nights and others make it total blackout.
