Luring tamed lox
I'm currently technically in the iron age (Bonemass not yet killed, already have some silver from exposed nodes), but I have a small farm in the plains. I tamed a couple of lox that were nearby, just because, so they're free roaming. I'm still a little ways from being able to craft a saddle, so I was wondering if there's a way to lure them to a specific spot in the meantime? I've tried using single cloudberries to create a trail for when they're hungry, but after eating one they seem just keep wandering farther away from each other so I can't even get them close enough to fence in.

Lox indeed love to roam. They are very easy to breed as they tend to stick together in groups of 2+, so throwing stacks of food equivalent to the amount of lox in the group will almost always guarantee coitus and an increase to the cabinet. It is more practical to build an earthen wall around structures one wants to protect rather than a wall to contain them. Continuous breeding will increase their numbers so that roaming is not an issue. Lox seem to prefer congregating around large rocks, which makes it very handy during "You are being hunted". The only downside is they will denude the area of trees, which is not really a problem because trees are easily replaceable and a lack of trees makes deer & boar hunting much easier. Hunting deer (or any creature) on the back of a lox can be a lot of fun. When I hunt on loxback, I will dismount but stay standing on the lox' back and pick off prey with my bow, or deathsquitos with my knife.
Wolves on the other hand, tend not to roam far from the place they are commanded to stay. So placing packs around ones HQ, especially in areas deer and or boar spawn will keep them fed and increase their numbers. Offspring will move 50-100 metres away from the pack just before they mature to adults. Large packs 6-10 placed 50-100 metres away from each other will help considerably during invasions (I've seen 2, 2 star wolves take down fuling beserkers in 2-3 strikes, likewise trolls, their main weakness is against the poison from "A foul smell from the swamp".

You can literally push them around when they're idle, but as soon as they decide to move they'll push you out of the way.
I've used that to move them into a pen before.

Yeah a friend of mine started Taming... was so proud he did that before me, Wolves and Lox. Then I seen to what length he goes to keep them in one place... a big earth mound but since they seem to piggy back each other once an enemy is on the other side(yeah he doesn't like campfires everywhere lol)he added some stone "ceiling" on top.
If I had seen that before I tamed a few, I would have not tamed them again lol. What I do basically, is sometimes throw some food down when 2 are close by... otherwise I just ignore them. They are a pain.
Once they see an enemy, they engage and run wherever the enemy runs to, and once they killed it they seemingly roam wherever they happen to be. They do not go back to where they where... and I don't put a saddle on each of them, riding them back every time. Like I have nothing else to do then trying to keep that herd fleas together
So yeah, I will not tame any Pigs or Wolves... though for the Wolves you can make them follow you. Lox you have to literally saddle up and ride. Unless they add an Item or change the AI so those animals not drift around and keep spreading over the whole zone there is no point in herding. It's more pain in the behind then anything else.
That said... my Lox control the Plains I am in... they are everywhere... and I not even know which are mine and which not lol.

Try surrounding the paddocks with bonfires, kept at a respectable level of course.

You can use Campfires or Bonefires they all have the same area of effect for Player Base function. Both are not attacked by enemies and they not need to burn to deter enemy spawn.

I have 2 Lox paddocks, and they do indeed wander further and further away from where they are tamed...I have to round them up and drive them back to the paddock areas. It is a pain to retrieve them, wish after taming they would not pursue when aggro'd.
I made a concerted effort to make as many saddles as possible and that way I can just hop on and marshall them up where I need 'em. I jump from Lox to Lox and use my Ride skill to level up quickly....helps. Get some saddles made, asap, to keep them under control.
Without having the advanced gear to squat in the Plains, I would suggest tossing a ton of cloud berries near your stock and only visit occasionally to increase the herd...to offset any losses due to events, etc...they will stay near where they are when despawned when you leave the area and come back.

Haven't tried the harpoon on the lox, but you probably need to enable friendly fire for that to work now.
