Hunting Deer
OK , I hear them all around me but sometime I can't find the damn things. When you hear their call is there a way to know which direction they are in or a trick used to find them?

I have surround sound headphones. You listen for their "HONK" and sneak toward that direction ...
Your surround sound headphones most likely don't help you at all because Valheim's integrated surround sound support (inherited from its Unity game engine) is permanently disabled and it only outputs stereo (virtual surround sound).
That is until you
mod it yourself...

This is a beginner's mistake, indeed. Never jump while in action, except when you are just frollicking to rally point B from point A (and you are rested). Nice, right now I run out of breath jumping up 3 times :) Long way to go
The number of times when I died drowning because my last jump ended into deep water, or when I was helplessly retaking my breath close to my target, and let a deer flee, or a brute deal a devastating blow, or being stuck in some roots and stones at the end of a running/jumping action, to just stare at a tree log swung from above...

I just follow the sound. If I can't find them in ~15 seconds, they never truly existed and it was all in my head. Time to move on and kill the next one.

I have surround sound headphones. You listen for their "HONK" and sneak toward that direction until I see their HP bar pop up, slap them with a wooded arrow and move on to the next one. I use a seed called "LroyJenkin" and they spawn 3 deep in places. First hunting trip on the seed I brought back 43 skins.

All right just follow the sound then ..... I'm have success with that about 30% of the time it seems - maybe later in the game I can build salt blocks and a deer stand :)

You will eventually be able to run fast enough to kill them with a knife, but that will take quite a bit of cardio before you can accomplish it. =P

The first boss gives you a buff you can activate to reduce sprinting and jumping stamina cost by 60%. As you advance in the game, you'll get better foods that provide more health and stamina. You can also make a spear and press mouse 3 to throw it a short distance.

Spear throw or a bow will help a lot with deer hunting. When a deer honks go stealth, stand still, check your surroundings and try to get it from afar.
Or just run blind and let the sloppy AI do the job instead. Sometimes they are so slow to react, you can punch them to death...
They tend to spawn always at the same spots, so you can remember the spawning points close to your base, and come back every other day knowing where they will be.

The best way I found to deal with deer, is to just run around until you spook one. When you hear it honk and see it run away, just stay where you are stealthed. They'll come back to their original location or close to it after a brief period of time, and then you can easily get them with a bow.

Like others have suggested, follow the sound. All critter sounds in the game are directional which is incredibly helpful. If this is not working for you, try playing with headphones up.
My best tip... You'll get to know how loud they are when you're really close to them (and inevitably scare them off), so practice sneaking around the terrain when you can hear them close-by. This will help you get eyes on them to shoot with an arrow or sneak up behind them to whack/stab. :)
