Turn off "Depth of Field".
If it is not this option, I recall that the new update(s) did add graphical options, and perhaps changed the default setting.s before presenting them as options.

OP, you could also run BepInExPack Valheim and GraphicConfigPlus mods. It simply offers even more options to tweak graphics in an Unity game (that the Devs decided to not put into the Parameters screen, and Valheim's config file. To me, it's not really a mod, it's a tool to configurate the game's engine (as far as graphics are concerned). (uninstalling is as easy as deleting/moving a file from a folder).

I do want depth of field, i just want to be able to appreciate the gorgeous sky and tree in the game, and it seems like an odd choice that they took that away by. Turning off a nice graphical option certainly isn't my preferred method.
it's just close up so many textures are stretched

I thought the sky wasn't as pretty nowadays. I remember spending nights on ship journeys just staring at the glowing roots and the stars while i couldnt travel (avoiding serpents and unseen hazards early on) and it was actually enjoyable to do so. I thought I just messed that up when i reduced my settings last (had to downgrade a graphics card, sadly).

Most the rest seems alright, though fog seems soupier than it used to be, i figured that was related to the whole mist and mistlands update, like adding to the fog after spending so much time on an entire biome of fog physics. I do also get the random stone terrain strip on one of my games, but that's an unrelated issue already known that happens sometimes when you use an old map basically. You can apparently have some weird terrain or texture related glips if using a map from an earlier version (seems to be specifically pre-mistlands for that one, but the map i was using that has the issue is from pre-caves so it's even older than that lol).

Perhaps you ran it with a texture / lighting mod in the past and you forgot it?

Dunno they seem fine now

The only problem is "stretched textures" for like trees and rocks

Ah? I'll pay attention to this detail. I bet there is a mod to change the skydome anyway.
