I found the hardest part of the game was the side-work, not the combat.

You could mod, but you can just as easily do a number of things to make the game harder if you want to. Use weaker weapons is the easiest. Doing less damage is essentially the same as increasing the HP of enemies. Don't upgrade your weapons, same reason.

Use lower quality armour and don't upgrade it. Eat weaker foods, or eat only two foods at a time instead of three. Doing both of those will lower your health, defense, and stamina making the game harder because you won't be able to take as many hits.

Run around berserker style, shield, weapon, pants, no chest armour, no helmet. Go to a harder biome. Don't use mead to heal. Run around without the rested buff. Use only melee or use only ranged attacks. Use a spear but only attack by throwing it. Carry only one so you have to recover it before attacking again.

So if you're solo, scale mobs as if there was another player in the world
2 -> 4
3 -> 6 and so on

Best option is installing a mod pack or two, There's one that let's you decide how difficult the game should be, or you can choose one of several difficulties as pre-sets.

You can set player amount difficulty via the console commands. Simple Google search on valheim devcommands will give you the info you need to do this

They should add a difficulty setting for worlds so players could make their game easier or harder as they see fit. I see many people complaining that the game is too easy or too hard, it'd be best to please most by giving them options.

My real suggestion is to walk backwards everywhere you go in game.

Valheim + mod gives that option in its configurations. You can add a % to mobs health and damage according to how many players are in range of the mob.

There’s also a mod that allows making all mobs by default 2-3 stars.
