Yeah, just make any kind of thin pillar, horizontal or vertical, and then mark out the respective times using the shadow and signage. One of the better builders on the Valheim Reddit is even working on a "digital" sundial, just a gigantic 3D structure that casts the time on the ground depending on the sun's position.
