Did they change the copper physics?

I have dug under the copper and now it is just floating in the air. I have checked if there might be a piece of the deposit still in the earth that holds it but found nothing.

Sometimes the whole thing breaks up, other times I have to jump on top to break it a piece at a time.
You can use the hoe to raise ground to try and hit underneath it, that will often get it to explode.

Had that happen to me yesterday. Dug everything under it away and it still didn't fall. Too high to reach from below. Finally had to jump on top of it and hack it away from there.

You could just build a ladder for that.

Yeah, but i usually have more stone than i know what to do with after mining for a bit.

Once a chunk is floating completely, as some point after mining it will collapse the entire thing. Sometimes it's the first new break, sometimes it takes a few.
