Pulling a serpent out of water is so hard now.

Stanima is draining so fast while the ship is doing the pulling with wind. You would have to find one really close to the shore to practically pull it to the land.

I usually bring Medium stamina mead & tasty mead & drag serpent too shore with harpoon, changing sail speed at times while doing so to let the serpent catch up to me a bit, and drop sail to speed up if needed, then drag to shore & let my free roaming pet wolves have at it, saving me further stamina taking it out myself. Easy scales & meat & tophies.

You don't need to drag it all the way from the sea. It will follow the ship. However you have to let it attack the ship once in a minute or it will retreat. If you do this properly, it will follow you near the shore and from there you can drag it onto land.

Well, I think I just had bad luck the first few attempts trying to pull it on the shore. 3 of the encounters happened right before the dawn, when the sun raised they immediately turned away and tried to get back into the ocean. Another time I was not prepared, run out of stamina on the shore and let it slip away. I managed to kill 3 serpent afterwards with the help of stamina potions. Also the spawn location is important, if it's in the middle of the ocean with no land around, it's just impossible to harvest its scale.

I've been luring them in to shore, harpoon them at the last second before I hit land, then pulling them into my large host of tammed wolves patrolling the shore. Easy- peazy.

If you don't need it care about the scales, they go down pretty quickly to arrows. The meat floats.

Step 1: Bait Serpent to shore.
Step 2: build fencepole wall around it.
Step 3: Poke the Serpent until it pops.

Harpoon is optional.

No trouble, kite as far as you can, rarely have to harpoon all that far. Most every serpent will follow for some distance, if you harpoon immediately its kinda wasted effort

I killed 3 serpents solo recently. What I found is to point the ship to land with half sale not full. This way I could drag the serpent without losing stamina until the ship hits shore then kill it. Graydwarfs or other mobs will help attack it which is funny. I'm eating 3 stamina foods, the more stamina the better.

Not true, eat proper stamina foods, have at least 2 stamina potions and easy kill on land once you drag it to shore, slow the boat down, speed it back up and watch how the stamina goes down to indicate when you will need to re attack with the harpoon if needed. I kill them regularly alone now when I get the chance to sail by them.

Eat stamina foods, have a stamina potion available to drink when you get low, and possibly Tasty Mead would help too? I'm not sure of the last one, but it should help...?!

when you're moving in a direction the snake wants to go too (so you're not pulling it) you are not loosing stamina and in fact regaining it.
so the trick is to lure the snake as close to the shore as possible and only pull it out for the last few meters.
(i usually use 2 or 3 stamina foods for this though)

on the other hand you only need scales to get yourself a shield. i don't think there are any more uses for it. after that you just kill it in a water and get meat (wich i think floats)

Managed it fine not too long ago myself, albeit on a multiplayer server with someone else on the rudder.

If they're aggroed on you, you have a couple of rams before they are at risk of seriously damaging the boat, and you can lure them close to shore before snagging them with the hook.
