Wolf Taming
Has there been a recent change to the process? Pretty much every guide/How To I've found says the same thing.
My zero star wolf has been in his "trap" for hours and is only at 59%. Plenty of meat so that's not the problem. Do you have to use wooden enclosures? (I made mine out of stone).

Wolves have good senses. If you are close enough to see the progress bar (even while you are sneaking) you'll alert it. If you can see yellow hearts going up its taming. The tamer it gets the greener the hearts coming off it will get.
Stake walls aren't tough enough for a starred wolf. You need a pit, stone walls, or multiple layers.

Thanks. I've been in render range of the wolf but not too close. So far used about 3 meat and is 74%. This is a 0-star wolf and I've been watching it for about one game day, Seems to take 1½ days to tame

from what I understand you have to remain in the area not too far away from the wolf. The game will "despawn" the wolf if you go to far away, then "respawn" the wolf if you get close enough, thus pausing the taming process.
Making a little shack not too far away is the best way to make sure the taming process is going on, passing the night inside it also speed up the process.
Like Elenoe said, been too close will trigger the wolves, so stay at a safe distance
From my research that only applies to 1 and 2 star wolves.

I need help. i enclosed a wolf in a pen made with stake poles. the last one broke a wall and escaped. if i run around and repair the walls, he stays spooked. so i don't get how people are able to do this. i have a stack of raw deer meat inside. he hasn't touched it.
he is angry and attacking walls constantly. if i walk away and sneak, he still attacks walls. only thing i can think of is kill this one and dig the floor down a ways and lure a new wolf in...?

placing my cursor on him only shows "wolf" and his health bar. He has yellow hearts coming off him though... but i thought there was supposed to be a progress indicator. I don't see anything like that.

no, anything is good. He just can't be freightened. So make sure of that. If it's freightened it won't get taming points. Your presence will do that. Fire close to it will do it.

Any idea of how much meat one wolf needs to be tamed?

Log out and come back. There seems to be a taming bug where they will get stuck at some % and not move. I tamed a few boars and they were all acting tame while one was bugged at 68% (though acting just like the rest). I logged for the night and came back and jumped in to pet my new friends the next day and one boar started attacking me that was at 68% tame.
